the2tin2of2drained2kidney2beans2and2cook2for2a2further252mins.2If2the2chilli2
become2to2dry2at2any2point2just2add2a2bit2of2water.2

1.2Soak2the2rice2noodles2in2hot2water2for2202minutes2or2until2cooked2
2.2Heat2some2oil2in2a2pan2and2add2the2two2beaten2and2seasoned2eggs2to2make2
an2omlette.2Transfer2to2a2plate2and2chop2into2strips2and2leave2to2cool.2
3.2Heat2some2oil2in2the2wok2and2add2the2chicken,2once2it2is2sealed2on2all2sides2
add2the2garlic.2
4.2Add2the2spring2onions2and2shrimp2(if2using)2and2stir2fry2for2another2minute2
5.2Add2the2chillis,2drained2noodles,2fish2sauce,2lemon2juice,2sugar2and2peanuts2
and2stir2fry2over2a2high2heat2for2another2minute2

pan2over2a2low2heat,2for252minutes.2Cut2the2chicken2into2strips2and2add2to2the2
pan2with2the2chopped2onion.2Cook2for25N82minutes2or2until2no2longer2pink.2Add2
the2aubergine2chopped.2
