Baked Cod

Makes: 2 servings

Each serving contains: 2 -proteins, 0 -carbs, 0 -vegetables, 1- fat

Ingredients:

12 oz of cod loin
1 Tbsp olive oil
1 tsp butter
2 lemons
2-3 cloves of garlic, chopped
2 Tbsp fresh parsley, chopped
white wine, splash
sea salt
ground black pepper or white pepper

Directions:

1 Preheat oven to 400 degrees F. While oven is preheating, prep cod.

2 In a baking dish, wipe bottom of dish with some of the oil. Pat the
cod loins dry, season with salt and pepper of choice. Put cod loins
in baking dish. Drizzle with remaining oil and add butter to dish.
Add chopped garlic, fresh parsley, and a splash of white wine.  Add
lemon slices to dish along with using the fresh juice in the baking
dish.

3 Add to oven and bake for 10-15 minutes or until fish is opaque and
flakes easily with a fork.

4 Serve and enjoy!

Flavor Tips: Below are different variations of items that pair well with
Cod!

Onions, carrots, celery pair great with Cod. Add some cayenne pepper
for some heat or Old Bay seasoning!
White beans and potatoes are great carb ideas to pair with Cod.
Tomatoes and olives (capers too) pair great with cod.
Other vegetables that pair well with Cod are mushrooms, bell peppers,
and cabbage.
