GIN
Gin is an alcoholic beverage made of grain, spices, and add juniper berries by process
distillation alcohol contains between 40-45%

• Gin first originated in the 17th century by Dr. Sylvius, a professor of Medicine. He
used the juniper berry known as “junipers” because he thought it could assist in the
care of bladder problems. British soldiers sampled this and called it the “Dutch
Courage.” They brought the recipe home and they called it gin.

• It became the national drink of England, which had established over 7000 gin
distilleries alone at that time.

TEQUILA
Tequila is an alcoholic beverage made of blue agave by process distillation alcohol contains
between 40-45%

Type of tequila:

• Bianco or silver

This is the traditional tequila that started it all. Clear and transparent, fresh from the
still tequila is called Blanco (white or silver) and must be bottled immediately after
the distillation process. It has the true bouquet and flavor of the blue agave. It is
usually strong and is traditionally enjoyed in a "caballito" (2 oz small glass).

• Oro or Gold
Is tequila Blanco mellowed by the addition of colorants and flavorings, caramel being
the most common. It is the tequila of choice for frozen Margaritas.

• Reposado or Rested
It is Blanco that has been kept (or rested) in white oak casks or vats called "pipones"
for more than two months. The oak barrels give Reposado a mellowed taste, pleasing
bouquet, and its pale color. Reposado keeps the blue agave taste and is gentler to the
palate. These tequilas have experienced exponential demand and high prices.

UP SELLING/SUGGESTIVE SELLING
Up selling/suggestive selling encourages guests to buy additional food and beverages. An
example of suggestive selling is suggestive an appetizer to go with beverage orders. Up
selling means suggesting more expensive and possibly better quality items

Here are some techniques server uses for more effective suggestive selling ad up selling:

1. Develop a selling attitude

2. Be enthusiastic. It’s easier to sell something they’re excited about

3. Make beverage sound appetizing. Use words like fruity and thirst-quenching, when
describing them

4. Ask questions. Find out if guests are unhurried or only have time for a quick drink;
whether they like sweet or tart beverages; if they feel like having something hot or
cold

5. Suggest specific menu items, don’t simply ask, would you like soup with your drinks?
Instead, point out “ A cold bowl of borscht would go nicely with your martini on a hot
day like this
