NIRS DS2500/DS3 helps millers to boost yield

by giving not only an accurate measurement of

protein in flour, but also unique accuracy
regarding ash. Robustness coupled with ground-
breaking performance in near-infrared (NIR)
guarantees highly accurate ash measurements by
anyone, anywhere, at any time.
With the NIRS DS2500/DS3 by your side, you
can hit targets precisely for profitable production
and more precision in your production also helps
to avoid expensive rework and realize the
quality potential of your production.
This Application Note describes the calibration
models and the results that can be expected
when analysing wheat flour samples using the
NIRS DS2500/DS3.

The application contains calibrations for five parameters – Ash, Moisture, Protein, Wet Gluten and
Water Absorption. The concentration range covered with these calibrations can be seen in the table
below.

Table 1
The prediction models in this application were developed using the Artificial Neural Networks
(ANN) technique. The performance was evaluated using independent NIRS DS2500/DS3 test sets,
from which the results are presented in the table below. The test sets have not been included in the
calibration set and represent data from a different instrument and a different reference laboratory.

Table 2

The graphs below show the validation sets predicted results versus the reference (actual) values for
the test set.
The performance example outlined in this note should only be regarded as a guideline for the
expected performance of new installations. The performance of new installations will always
depend on the uniformity of the sample preparation and the homogeneity of the product, as well as
the accuracy of the reference method used and the range for the test samples. The test sets for each
product are still fairly limited which might also influence the accuracy values presented. An
indication of the obtainable performance can be found as approximately 1.5 to 2 times the
reproducibility of the reference method. If the samples you are measuring exceed the stated
calibration ranges, or have non-common variations of other components, this might also influence
the performance of the calibrations.
For analyzing flour, the recommendation is to use the standard small cup. Fill the cup with approx.
30-50 grams of sample.
Compressing the sample is not necessary.
We recommend that the analyzer lid is closed when samples are analyzed.

The calibrations have been stabilized to be able to analyze samples at sample temperatures between
10-30 ºC / 50-86 °F. For optimum performance, the sample temperature should be as close as
possible to the ambient temperature. Analyzing at a temperature higher or lower than the
environment temperature increases the risk for moisture condensation or moisture evaporation from
the sample and temperature drift during the analysis.
