Procedure:

1. Arugula and basil is to be VERY lightly tossed with olive oil.


2. Season with salt
3. Place arugula on the plate as per picture.
4. Arrange mozzarella, prosciutto and peaches (use figs instead if they are in season) as per picture
drizzle with olive and freshly milled black pepper.

Break them up into evenly sized pieces. 

Boil some water and let it cool down to 180F. Salt the water and gently drop in the curd into the water

Using a large spoon, lift the curds to see if they're ready for kneading. They're ready when they are melty-
looking, like in the photo on the right.

Stretch and knead. If the cheese starts to get cold and stiff, dunk it back into the hot water. Keep doing
this until the cheese starts to feel smooth—you don't want your mozzarella to have a rough, flaky exterior
