EIA’S EATERY

NATIVE CHICKEN TINOLA

EXECUTIVE SUMMARY

Eia’s Eatery is the name of the business which will be located in a certain barangay

along the Andaya Highway. This will cater ready-to-eat foods with specialty of Native

Chicken Tinola. It has complete comfort for the travelers with a Bahay-Kubo inspired

eatery with clean comfort room and bath.

A small store can be adjacent to the eatery that will sell other needed personal

goods by the travelers. Beverages like softdrinks and juices will be readily available. Thus,

the sales will not only be coming from the foods to be served in the eatery but also from the

sari-sari store.

Having been tired on their long travels, they usually look for a relaxing place to stay

with, others may even attached their “duyan” just to catch some sleep and be relaxed. The

eatery provides them with seats where they can lie down their tired bodies, being the wind

in the province is quite fresh as compared to the cities where they came from.

This will help the community in two ways through the workers (cook and

waitresses) coming from the barangay and the ingredients like Native Chicken, will be

bought from the local market.

Cleanliness of the surrounding is primary concerned in this eatery. The segregation

of waste will be applied. The segregated bottles and cans are also another source of

income.
COMPANY OVERVIEW

Eatery that will cater those who are travelling the Andaya Highway and students in

the nearby school. The place should be relaxing because of the heat that the travelers

experience while on road.

The eatery will serve food that are not always familiar to the travelers so that they

will have different experience.

The eatery will serve native chicken tinola, so that the traveler will have

something to sip to ease their tired bodies caused by the long distance driving. And since

the native chicken is not available to other areas, like the Metro Manila, they will find

satisfaction in eating it.

PRODUCTS AND SERVICES

Eatery will serve rice, and other viands and the specialty is Native Chicken Tinola.

Viands like menudo, caldereta, sisig, and other meaty foods. Fish and vegetables will

always be present in the display cabinet. Snacks will also be available like softdrinks,

packed juices and some bread. Placed on the bigger casserole will be the tinolang native

chicken, which is always on the burner, thus, will be served hot. For those who will

request for soup, they will be catered.

The area will have three big bamboo tables and with bamboo benches surrounding

them. There will be a common comfort room since the space is limited. There will a sink

where the customers can wash their hands.


There will be one cook, and two (2) servers/assistant to cook. The cook will prepare

the foods to be served while the servers will be waitresses and secure clean the area to be

always clean, serve the food to the table of the customers.

INDUSTRIES OVERVIEW

Target Customers

The travelers along the Andaya Highway who are coming from south of the

Philippines and as far as the north like Visayan or Mindanao areas. There are nearby

barangays which may also have the possibilities of being the customers. A nearby school

is also available, the students can be the customers, too.

The chosen area is along the highway, it can easily be accessed. The distance from

other eatery is quite far.

Native chicken is very rare in some areas of our country specially those that live in

the cities. It is even more delicious than the ordinary chicken available in the market. It is

always being looked for by travelers due to its taste. In Ragay, Camarines Sur, native

chickens are source of income of some households. They are considered to be a part of

their backyard farming just like the pigs. Availability of native chickens is not a problem

due to these households.


PLAN OF OPERATIONS

Operational Milestones

All the ingredients and materials will be listed and every Sunday, materials and

ingredients to be used can be bought from the market early in the morning to get the fresh

and plenty of ingredients to choose from. Upon arrival, the meat and vegetables will be

cleaned and placed on their appropriate stocking area like cabinets and refrigerators to keep

them fresh for they will be used for the whole week.

The desired meals for the day will be cooked while the native chicken tinola will

always be on the stove available for the customers especially those wanting to have their

free soup. Tinola will be served in a medium sized bowl. It will be containing the usual

ingredients liken chicken, papaya/sayote, pepper, ginger, garlic, onion, dahong

sili/malungay and other ingredients to add flavor to the soup.

Sales and Marketing Strategies

The chicken tinola will be served hot always and properly arranged in a bowl for

its presentation They will be offered constantly to every customer but a display of an actual

bowl with the ingredients, then hot sop will just be poured in the bowl if a customer will

request.

Pictures of clients and the food being served can be posted in the facebook to

advertise it. If the quality is good enough the word of mouth is one of the good

advertisement.
Growth Strategy

The eatery if success permits, will have an expansion and can have another branch

with the same position as the previous, located along the highway since the native chicken

recipes are favorites of those living in the cities.

The quality and taste of the foods to be served shall be the main priority.

Cleanliness of the surrounding shall be maintained so that the customers will be pleased

and happy in their visits. Good management is a must so that savings from the eatery can

be done. The expansion is or branching can be one of the goals.

FINANCIAL SECTION

Barangay Clearance will be secured and the permit from the Municipality will be

accomplished. The eatery is rented space along the highway with electrical and water

supply already connected. Expenses will be coming from the utensils and other materials

for dining and cooking. The rent, utilities (electricity and water) and the ingredients in

cooking the dishes are the major source of expenses.

The income that will be coming from the Native Chicken Tinola and the other foods

to be sold are the main source of income. Additional income is coming from the comfort

room which can be charged when they used specially if some travelers would like to take a

bath.
