Glucose
C12H22O11
Measuring 8 moles of the
common table sugar at home:
C12H22O11 C + H2O Convert 8 moles of sugar to gram
C= 12 C= 1 X 12 = 12 C12H22O11 12C + 11H2O
H=22 H= 2 X 11 = 22 12 moles of Carbon 12.01 grams of Carbon

O=11 O=1 X 11 = 11 8 moles of C12H22O11 X

1 mole of C12H22O11
X
1 mole of Carbon

C12H22O11 12C + 11H2O

= 1152.96 g C
11 moles of Water 18.02 grams of Water
8 moles of C12H22O11 X X
1 mole of C12H22O11 1 mole of Water

= 1585.76 g H2O 8 moles of C12H22O11

1152.96 + 1585.76 = 2738.72 g = 2738.72 grams
Background & History of Sugar

Here’s some background and history about sucrose/sugar:

1. While chewing sugar cane for its sweet taste was likely done in prehistory, the first indications of its
domestication were around 8,000 BCE. Sugar cane spread from the Polynesian region across the world,
becoming a truly global crop with strides in cultivation and processing along the way.
2. Sugar in its crystalized form also has a long history and was even found in medicinal records of both Roman and
Greek civilizations. Typically, sugar was used to treat indigestion and stomach ailments, and was also used in
wound healing.
3. Sugar is one of the world’s oldest documented commodities, and at one time, it was so valuable that people
locked it up in a sugar safe!
4. IT WAS USED AS A MEDICINE FOR CENTURIES. The use of sugar as a medicine dates back at least as far as ninth
century Iraq, where it was combined with fruits and spices to make medicinal syrups, powders, and infusions.
Centuries later, British doctors prescribed sugar to cure a range of diseases—one 18th century physician even
suggested blowing sugar powder into the eyes to cure eye ailments and irritations.
5. EATING SUGAR CAN GIVE YOU WRINKLES. It’s common knowledge that eating too much sugar can cause
weight gain, but few people know it can also affect the elasticity of your skin. It turns out, overconsumption of
sugar causes glycation—a process in which the sugar in your bloodstream binds to proteins, forming molecules
that make the collagen in your skin more brittle—which, in turn, causes wrinkles.
Facts & Feature about Sugar
1. SUGAR IS ADDICTIVE AND IS NOT CONSIDERED BEFORE AS SACCHARIN. Sudden sugar abstinence can result in
discomfort, nausea, and flu-like symptoms. When sugar was originally brought to Europe in the eleventh century, it was
mixed together with other exotic spices like ginger, cinnamon, and saffron and used to season savory dishes by the
wealthy.
2. SUGAR HAS BEEN A FLAVOUR ENHANCER. Sugars may differ in colour, flavour, sweetness and crystal size. Each of
these characteristics allows sugar to perform a variety of functions in food products, in addition to providing a sweet taste.
Sugar has been part of our diet for thousands of years. Sugars are carbohydrates that provide energy for the body.
3. MANY DIFFERENT KINDS ARE AVAILABLE. The three main categories of sugar are monosaccharides, disaccharides,
and polyols. Monosaccharides are single molecule sugars, while disaccharides are made up of two linked
monosaccharides—both are found in a range of products, from fruits and table sugar to milk. Polyols, meanwhile, aren’t true
sugars—they’re found in many sugar-free sweeteners.
4. SUGAR OVERCONSUMPTION HAS BEEN ASSOCIATED WITH LOWER INFORMATION PROCESSING ABILITY.
That implies if you're a critter, eating too much sugar could make you regret later. Scientists have only researched the
effects of sugar consumption on four-legged subjects so far, but they believe the findings may be applied to humans
because the brain structure of rats is similar enough to our own.
5. IT CAN BE APPLIED TO FOOD AS A PRESERVATIVE. Sugar has long been employed as a preservative, and scientists
now know why: high sugar concentrations cause bacteria to lose water through a process called osmosis, and bacteria can't
grow or divide without water.
Interesting Ideas
about Sugar
The only taste humans are born craving is
sugar. Heinz ketchup contains 1 teaspoon of
sugar in each 1 tablespoon serving. Sugar can
be made both by sugarcane and sugar beet.
Lemons have more sugar than strawberries.
The World Health Organization (WHO)
recommends people consume less sugar than
is found in one regular soda per day.
Health Issues
Too much sugar can increase the overall risk
for heart disease. In fact, sugar actually
changes the muscle protein of the heart as well
as the pumping mechanics of the heart. Excess
sugar consumption has been linked to cancer
production. Studies have found that high sugar
intake negatively affects the survival rates in
both breast cancer patients and colon cancer
patients.
Glucose
Fructose and glucose are found in fruits,
vegetables and honey

Sucrose
Sucrose is often called table sugar. Made up from glucose and
fructose, it is extracted from sugar cane or sugar beet and also
naturally present in most fruits and vegetables

Lactose & Maltose

Maltose is also known as malt sugar and is found in malted
drinks and beer. Lactose is commonly called milk sugar
because it is found in milk and dairy products
