Trends in Food Processing of the Coconut

I. INTRODUCTION
Coconut is a tropical fruit and is widely used in food and in other
industries. That is the reason it is considered as the “tree of life” due to the
incredible value from its products and byproducts. (“The coconut palm,”
2021). The coconut is a palm tree that produce fruit which contains white
flesh and a clear juice that is fit for human consumption (Marcus, 2013). In
this research, considering the qualities of a coconut, the different trends
and processes applied to optimize its value are determined.

II. OBJECTIVES
At the end of the research the student is expected to:
1. illustrate the industry situation of the coconut;
2. determine the existing technologies (old and new) in the processing of
coconut; and
3. present the process flow diagram of the unit operations for coconut.

III. METHODOLOGY
1. All the necessary information and related literatures were
comprehensively searched for the research work. The following guide
questions were followed:
 Discuss the coconut industry.
 What are the existing food processing operation for the
coconut?
 Make a detailed process diagram of unit operation. Include
discussion in every process of its products and byproducts.
2. The output was supported with necessary figures and diagram.

IV. RESULTS AND DISCUSSION


The Coconut Industry
The coconut industry according to Shahbandeh (2022), from the survey
of coconut production in 2020, Indonesia is the world's top producer of
coconut with 16.82 million metric tons, followed by India with 14.7
million, then Philippines with 14.49 million metric tons of coconut
produce. The coconut is versatile and can provide sources of food, fuel,
medicine, and even building materials. Meanwhile, according to Burton
(2021), Indonesia tops the world production of coconut with 17.13 million
metric tons, followed by the Philippines with 14.77 million metric tons and
India with 14.68 million metric tons. The Philippines used to be the
world's largest producer of coconuts, and it is estimated that around one
quarter of total farmland in the Philippines is dedicated to coconut
production.
