INTRODUCTION
Shakey’s Pizza was founded on April 30, 1954, in Sacramento, California, where
Johnson and Plummer remodeled a grocery store as the brand’s inaugural branch.
Funnily enough, the establishment didn’t serve pizza on its opening day because the
ovens weren’t functioning yet, so they only served beer. The sales from its beer went
into completing the pizza ovens. In 1975, Shakey’s launched in the Philippines—but it
promoted beer. San Miguel Corporation bought the U.S. brand and introduced it to the
Philippine market to promote its beer, a drink that went with pizza and chicken. The first-
ever Shakey’s was in Makati Avenue near the Rizal Theater. Soon enough, it multiplied
its branches across Metro Manila. At this time, Shakey’s presented itself as a beer joint
where one can also be treated to live music; however, this brand image was
inconsistent, leaving customers confused. For years, Shakey’s was known as a beer
garden, even after new management had taken the helm. By the end of 2018, Shakey’s
had 229 stores nationwide, a large number compared to the U.S. market, which only
boasts 58 stores. Despite its well-earned position as the country’s leading pizza chain,
Shakey’s has no plans of slowing down—the company has an annual target of 20 new
stores.

On Sunday, August 7, 2022. There was a big issue that pop out on the internet. There’s
a customer namely Julius Babao and he spread an issue about the Shakey’s pizza and
Babao posted a pizza unboxing video on his public Facebook page, pointing out a
circular piece of plastic in between the pizza’s cheese topping and dough. On other
hand, suddenly after Shakey’s heard about the controversial, the MANILA Shakey’s
Philippines has issued an apology after a viral video by news anchor Julius Babao
showed a piece of plastic inside one of the chain’s thin-crust pizzas and Shakey’s pizza
explain that incident is actually a coincidence .

Jane, the morning prep cook at pizza house, was preparing shredded cheese to be
used on pizza. His procedure included cutting the cheese into small blocks and then
shredding the cheese by hand. He prepared four gallon containers and left the
containers out at room temperature (70’F (20’C) until use. Three of the four containers
were used on pizzas later that day. The next day, the fourth container of cheese was
used. On both days, the pizzas were cooked in an oven set to 500’F (260’C). Four days
later, several people came back to the pizza house and said that they had become ill in
a few hours after eating pizza there. Only people who ate pizza on the second day
appeared because of ill.

In line with this, the students wants to conduct a study to fully know and be aware on
how to properly use food safety and sanitation to avoid such incidents every time food is
being prepared.

Issues and Concerns


Shakey's Pizza was known as a top-leading pizza restaurant around the globe. The
ongoing case study shows different issues. The first issue was found in its production of
pizza due to an oven defect, and instead beers were served on the first day of
operation. Secondly, the Philippines launched Shakey's Pizza to promote its signature
food product, contrary to the stated article in this case study. The third issue was found
in the safety and sanitation of the product since Mr. Babao was found to have plastic in
between the toppings and dough. The fourth and last issue was found to be the mis-
preparation of pizza that caused illness in consumers.

The Shakey's pizza management, particularly the production management, has failed to
secure and ensure production operations, and the statement in the ongoing case study
that the Philippines has launched Shakey's pizza to promote beer is false information.
The quality and sanitation of the pizza product must be carefully checked and ensured
before it is placed on the market, or any failure that occurs will be considered
negligence and will be borne by the employee and management.

The same thing happened to Jane, and even though what she did was acceptable,
there are certain procedures that must be followed when preparing food. Even if the
food is at the proper temperature and is still in it’s container, we can't guarantee that it is
safe or that it won't spoil because we don't know how long it will last and what kinds of
bacteria or cross contamination can develop when we store ready-to-eat food.
Even if we say that they are skilled and experienced in their work, they should be more
careful because it will affect the people who will eat the food that they prepare. The
concern here is that they did not even double check their stores and the proper food
preparation process. Jane should know and follow food safety and sanitation.
Concerning the fact that he did not follow the proper way of processing food is already a
big concern to think that Pizza’s House is a reputable restaurant and it happened that
he is not following the proper procedure, such as wearing gloves and this is a major
worry.

Statement of the Problem

Every business has issues, but in order to prevent losing customers and damage to the
business's reputation, it is necessary to have proper knowledge of how to maintain
cleanliness and proper food preparation process. The case study under consideration
where proper food safety and sanitation were not used, questions like these are
necessary.

1. What would you do if you were Jane to avoid this accident?

2. What Plan and Action should you develop a strategy for the pizza shop at this stage
to be taken to maintain performance and image among people?

3. What is the ideal set of guidelines or standards that the business should impose on
the pizza restaurant?

Pizza is one of the most popular fast foods in the world, but according to Shakey's Pizza
and Jane Pizza House, the cause of the incidents shows a lack of use of food safety
and proper handling of food sanitation.

Shakey's was alerted to an mistake in a delivery order from one of stores branches.
That a food-grade glassine sheet was used to separate our freshly made pizza crusts
and prevent them from sticking together when stacked. Unfortunately, before adding
cheese and toppings, one of team members neglected to remove the sheet.

Regarding about the event with Jane, he truly made a serious mistake in that because
he did not follow the proper procedure and method; even though the food he cooked
was placed in it at the proper temperature, the portion that he only did with his bare
hands is incorrect. .

Areas of Consideration/Indicators & Analysis


This society consumes a lot of pizza because it is one of the most well-known foods in
the world. In the first incident, beer is being promoted instead of pizza and in the
second, a sizeable plastic piece is placed between pizza slices and third, the problem
started when a customer complained from getting ill.

To provide a comprehensive analysis of the case, here are the internal and external
environment affecting the food safety. SWOT analysis is provided below:

Alternative Courses of Action


Providing knowledge to Jane' about food safety to prevent and avoid accident.

1. This plan aims to provide knowledge to Janes' about food safety just to ensure and to
avoid this accident. Inline with that, the first thing we want to do or to provide is to give
her a orientation about food safety. The very basic knowledge that Jane' have to know
is about FATTOM, because the reason that time she serve the pizza to the customer
that lead to sick all of them is because, first off all she remain pizza for three days that
actually the particular time bacteria could reproduce a billion in just 10 hours. On the
other hand FATTOM is the basic principle of bacteria to live, (F) stance for food,
bacteria needed a food to live and example of that is the pizza of Jane'. (A) stance for
acidity, some bacteria needed acid to live, (T) stance for time, as we took bacteria could
reproduce billion in just 10 hours, (T) temperature, bacteria also need a temperature to
live and according to DOH bacteria could live between 5C* (47 F*) to 57C* (135F*) And
this is one Jane' she prepared a four gallon of cheese in the temperature of 70 F* (20
C*) so the bacteria reproduce that particular time so that's why customer got ill because
she remain the oil in that temperature that bacteria could reproduce. O stance for
OXYGEN bacteria also need a oxygen to live and M stance for moist, bacteria also
needed moist to live. So in Jane' situation i think if we orient her about A basic principle
of food safety called ( FATTOM) we can prevent and avoid the incident. And it's actually
for the sake of the establishment and image to the customers.

1. Action strategy for pizza to maintain performance and image to the customer. Be
different, With so many pizza shops around, we need to offer your customers something
no other place has. If there are many generic pizza businesses in the neighborhood,
option for an exciting theme for the entire shop. In addition, hire an outstanding pizza
chef to design recipes that offer new twists on old favorites.
Maintain brand and consistency, We Always preserve a consistent brand image and if
we offer American-style pizza, we don't use Italian names for the dishes. Brand
consistency is an essential marketing strategy for restaurants, especially today. We
pursue to use Professional Food Photos and high-quality photos of food mean
everything in today’s media-centric market. Gorgeous pictures of your pizza creations
will have people craving one and placing an order ASAP. So we want to hire
photographer who knows how to make pizzas look amazing. It will be more than worth
it. Convenient Combo Packages, unlike other foods served in individual portions such
as burgers, Mexican, or Chinese dishes, several people can share a pizza.
We will offer combo deals that will make ordering quick and convenient for our
customers. For example, generate combo packages that feature pizza, wings, and
breadsticks. Targeted PPC Advertising. The process of using pay-per-click (PPC) ads
includes placing ads on search engines. You then pay when someone clicks on the ad
and visits your website. You can target specific keywords and include various
parameters like your town or region’s name when you place your ads. This marketing
will broaden our reach for diners in our target audience who might not know about you
yet. It also helps keep top-of-mind (and top-of-page) when hungry people in our area
search for pizza near their geographic location.
Recommendation
After realizing the problem of Shakey's Pizza and Jane' problem here are some
recommendation that we think Shakey's Pizza and Jane problem can do to solve their
problem.

Create a new healthy Image.

Shakey's pizza hut was established at 1954 at California, In the several years of its
opening the flow the business is good, However, it has to deal with the negative image
fast food which has gained in recent years, as the global health mega-trend has
gathered pace among consumers. As pizza has been particularly affected by this,
gaining an unhealthy image, Shakey's need to move its brand away from the traditional
fast food image and create a healthier experience for its customers. But this maybe take
a long time to change, however they must take a risk to continue the good flow the
business. The example of this is they have to change that the Pizza menu that would
be a healthy to the consumer, adding some sort vegetables, and they must indicate the
benefits to the consumer, While in Janes' after that issue she must study the proper way
of food safety, the proper way of handling, the proper preparation of food, assuring that
the facilities and preparation must be ensure that could not cause a illness to the
consumer and hiring a experts to look at her business. While in having a healthy image
to the consumer they must have a new look to her business like showing a new model
of healthy menu on its business

Conclusion

In the issues studied by the students about the incident that happened in the pizza
house, it shows a lack of knowledge regarding the use of the correct process in the
preparation of food and what possibilities can happen when an establishment is not
strict and knowing they feel horrible about their lack of resources and the clients that
come to eat the meals they prepare because of this.
However, since it cannot be prevented in any establishment, we could not be certain
that an incidence of this nature won't happen again. The students' primary conclusion
from the case study was how to provide information about food safety, cleanliness, and
other issues that will enhance food processing.

An essential topic that needs to be advanced quickly is food safety because people
want to eat more healthy and reliable meals. Everyone's health is always important. The
first fundamental is for everyone in the society is to provide clean nourishment to
everyone. The most crucial task at hand is protecting people from foodborne illness.
The government today has already made it possible to however in order to gradually
address these issues. Additionally, the study sought to control food cleanliness from the
point of production to the marketplace. Governments should be more transparent and
expose the truth to the public.
