Objective:

As part of the Butchery Kitchen, it is very crucial for you to know the proper and just process in
thawing frozen chicken.

Scope:

All chefs

Procedure:

1. Frozen chicken is defrosted in the chiller or under running water.


2. After defrosting the chicken is processed in minimum time.
3. Frozen chicken is stored in the freezer with expiry dates on the box.
