Objective:

As part of the Butchery Kitchen, it is very crucial for you to know the proper and just process in
thawing frozen meats.

Scope:

All chefs

Procedure:

1. Frozen meat is defrosted in the chiller in the deep tray container.


2. After defrosting, the meat is processed in minimum time.
3. Meat is stored in the freezer with expiry dates on the box.
