LOMO SALTADO: INGREDIENTS AND

PREPATION

INGREDIENTS

 3⁄4 kilo of thin loin


 1⁄2 kilo of white potato
 3 tomatoes
 3 onions
 1 yellow pepper
 1⁄2 to 1 cup of soy sauce
 2 tablespoons of red vinegar
 1 tablespoon minced garlic
 Salt
 Pepper
 Chopped coriander
 Vegetable oil, necessary amount
 4 servings of cooked white rice
PREPARATION

1. Cut the loin into thick strips. Season with salt, pepper and minced garlic.

2. Cut the tomatoes and onions into thick wedges. Cut the yellow pepper into thin strips.

3. Cut the white potatoes into sticks. Fry them in plenty of hot oil.

4. Bring a large frying pan to the fire. When hot, add a dash of vegetable oil and wait for it
to start smoking. Immediately add the loin and fry without stirring. When the meat is
browned on one side, begin to sauté and flame. You can add a splash of pisco after
adding the meat to be able to flambé (do it very carefully because the fire can be high).

5. Add the onions, the yellow pepper and the vinegar. Keep jumping.

6. Add the tomatoes and soy sauce. Keep jumping.

7. Add the coriander, stir and serve hot with the French fries and white rice.
