If it’s a
Grease Interceptor
then why not size by grease production?

What’s the problem?

Jurisdictions are overwhelmed with

Fats, Oils and Grease!

What’s the solution?

Model Plumbing Codes of course!

© Schier Products Company 2012

What’s wrong with the solution?

There are 4 major problems with model plumbing codes:

 Standards focus on minimum retention capacities

for hydromechanical interceptors
 No performance testing required for gravity
interceptors
 Sizing of interceptors focuses only on flow rates or
gallons of holding capacity
 Vague and confusing language regarding fixtures
that should be routed through an interceptor

What are the basic types of grease interceptors?

Hydromechanical – formerly called grease trap

With EXTERNAL flow control

Standard: PDI-G101

This standard is design

based requiring an
external flow control
with air vent (intake)
and internal baffles or
barriers
This standard includes a performance test
protocol to assure a minimum average efficiency
of 90% with a grease retention capacity of 2 lbs of
grease for each 1 gpm of flow rate.

Hydromechanical – formerly called grease trap

With INTEGRAL flow control

Standard: ASME A112.14.3-2000

or CSA B481-07

These standards are OPEN and

performance based allowing for
various designs or configurations at
the discretion of the manufacturer.

These standards also include a performance test protocol to assure a

minimum average efficiency of 90% with a minimum grease retention
capacity of 2 lbs of grease for each 1 gpm of flow rate.

Gravity Interceptor
Standard:
IAPMO/ANSI Z1001-07
(Formerly PS-80)

This is a prescriptive design

standard requiring such things as 2
compartments, a minimum of 300
liquid gallon holding capacity, 2
manhole covers, etc…

This standard does NOT include a

performance test protocol! There is no
certification process beyond an engineer
stamped drawing.

How much grease are we really talking about?
No. of Restaurants by state:
Arizona – 8,489
Oregon – 8,606
Colorado – 10,374
Washington – 13,731
Northern California – 21,929
Southern California – 40,351

Restaurants share of the food dollar (U.S.):

1955 – 25%
Today – 49%

Grease Production
Sizing Method
Schier Products has developed a way to estimate grease
production using historical field data.

Using this 2-step tool, you can size a grease interceptor

to provide enough grease capacity for an appropriate
pump schedule.

© Schier Products Company 2012

Grease Production Sizing Method
Step 1: Satisfy local plumbing code as required.
When flow rate based sizing is required as is with the UPC, see below, then proceed to Step 2.
If flow rate based sizing is not required as is with the IPC, proceed directly to Step 2.

Pipe Size ASPE Full Pipe ASPE 1/2 UPC HGI for UPC HGI for
(nominal) Flows Pipe Flows 1 Min Drain Time 2 Min Drain Time
2 19.44 9.67 20 10
3 58.67 29.33 75 35
4 125.77 62.96 150 75
6 375.47 187.74 500 250

What size tail piece serves this fixture?

Grease Production Sizing Method
Step 2: Adjust for pump-out cycle.
Size for grease production based on restaurant type and number of customers.

Schier’s Grease Production Sizing method depends

upon all fixtures in a commercial FSE being routed
through the grease interceptor.

It’s the only way to assure that greasy waste is not

circumventing the grease interceptor.

Size for grease production based on restaurant type and number of customers.

The Grease Production Sizing Method was developed

by compiling data from municipal pre-treatment
officials, pumper contractors and several
independent research reports.
