Scope of Food and Beverage Services


The food and beverage services are part of the Hospitality Industry or the
Accommodation sector of the Tourism Industry. This aspect of Hospitality
encompasses all food – and drinks – related services and the treatment of
guests and strangers. This covers the provision of food and beverage services
away from one’ home.
The scope of food and beverage services is large in coverage as it includes
any and all establishments selling and serving food. Unlike hotel rooms, food
and beverage services are availed not only by the tourists visiting a locality but
also by local residents who choose to eat a meal away from home.
Types of Food Service Operations
There are a number of food service operations. The following are the
general types of food services.
Type of Food Service Brief Description
Bistro This is a small establishment with a
cozy setting with cluttered, homey
décor, and friendly, casual staff. It
carries some special dishes, which
earn it a reputation.
Brasserie This is a fairly larger – sized
establishment with a long bar table
where people can sit and generally
be served one – plate items. On
some occasions, formal meal settings
may also be served. Service staff wears
traditional waiter’s uniforms. Often,
people come in for coffee, a quick
drink, or a snack.
Coffee Shop This is similar to brasserie – style
operations; often with a theme and

serves light meals available all day,
from breakfast to dinner. Coffee is
the most common beverage option
with a few tears or fruit juice
alternatives.
First – Class Restaurant or Fine This is usually a formal dining
Dining restaurant with elegantly set tables
and a full array of cutleries laid
out for the guest’s use. This is
generally associated with haute or
gourmet cuisine. Given the setting,
pricing is also expensive.
Restaurant This generic title covers a wide array
of food service where the
atmosphere is lighter or busier but
table service is provided. Often, the
type of food served falls under a
specific cuisine.
Hotel Restaurant This may be another type of
restaurant from fine dining to
international to themed restaurant
that may be located in a hotel.
Sometimes, there are several types in
one hotel. For luxury hotels, the
restaurants are more formal, serving
plated food or extravagant buffet
spread with expensive pricing. For 3 –
star hotels, the hotel restaurant may
carry a more casual air. Needless to
say, it is called a hotel restaurant
precisely because it is located within a
hotel and serves not only walk – in
customers, but the requirements of
the hotel guests who may need room
service and lobby service in addition to
food served in the restaurant
premises.
International Restaurants These are restaurants that offer food
choices of certain ethnic origin
outside of one’s own country. For
the Philippines, these include Indian,
Spanish, Greek, Italian, Cajun,
French, and Mediterranean cooking.
Themed Restaurants These are restaurants that not only
serve the food of certain ethnic
origins but also furnish and
decorate the establishment to give
a feel that will match the type of
cuisine being served. Sometimes, the
décor alone may be themed but the
food served may be unrelated. An
example of the latter would be to
decorate the restaurant with a Jungle
theme but the food served is regular
Filipino fare.

International Destination These are often the Michelin –
Restaurants starred fine dining restaurants
where the ambience, personality,
cuisine, beverage, and service go an
extra mile beyond fine dining. (A
Michelin Star is a rating that signifies
excellence in cooking awarded by
anonymous food reviewers). Service is
personalized and attentive. Generally,
the cuisine served is considered a
gastronomical experience, expensive
but worth the value one pays for.
Visiting such establishments is
visiting a destination on its own.
Health Food and Vegetarian Going Vegan is a growing fad,
along with choosing to eat healthy
and organic options. This special
lifestyle-oriented service is not for the
masses but chooses to cater to a
specific market niche.
Cafeteria This type is primarily a self – service
establishment where the customer
chooses what to eat from an array
of food on display. This is normally
the food service that may be found in
office canteens and academic
institutions.
Popular Catering or Casual Dining This has evolved from table service
teashops, cafes, and steakhouses
to what is known as diners, snack
bars, kiosks, and pizza places.
Ambience is casual and service is
quick.
Fastfood Outlets The most visible to the public, these
are the food outlets that serve food
fast. Some common local examples
are Jollibee, McDonald’s, KFC,
Wendy’s, Burger King, and the like.
Take – Away Outlets These food service places do not have
a place for patrons to eat. It is
assumed that food is served fast and
packed ready for the customer to bring
home. In Philippine setting, take –
away outlets are more commonly
called take – out counters. Oftentimes,
fast food and popular catering joints
have take-away counters for
customers who are in a hurry.

Classes and Contents of a Menu
There are 2 general classes of menus. These are the Table d’Hote Menu
and the A la Carte Menu.
Table d’Hote Menu (Table of the Host)
This class of menu is also known as menu du jour. Key characteristics
of this menu are that:

 The menu has a fixed number of courses;


 There are limited choices in each course;
 The selling price is fixed; and
 The dishes are readied and made available at the same time.

This simply means that an inclusive price is charged for a whole meal or
a specified number of courses, with a consideration of choices from each
course.

This type of menu may be offered for breakfast, lunch, or dinner and may
even be offered to a customer with the A la Carte Menu.

Examples of menus under this class are banquet set menus where the
list of viands are pre-set with a corresponding price, a buffet spread, and
a cafeteria which has a choice of viands with a staple for a fixed price.

Key characteristics of this menu are that:

 The choices are generally more extensive with the list of dishes specified
under each course heading;
 Each dish is priced separately and generally more expensive;
 It often contains the exotic or seasonal high cost foods; and

 There may be a longer waiting time because food is cooked only upon
ordering.

This type of menu is called “from the card” because the guests read through
the menu card to identify the choices of food, which they want to partake of.
A typical menu card from a sit – down restaurant traditionally contains the
following information:
 Appetizers
 Soups and Salads
 Main dishes – which are classified further by course: Beef, Pork,
Chicken, Seafood, and House Specialties
 Staples – rice, noodles, or breads
 Desserts
 Beverages
Depending on the standards of the food service establishment, the
extensiveness of menu choices may vary with the target market being served.

Types of Beverage Services
All food service establishments serve beverages with their meals, as it is
quite impossible to eat without drinking. In addition to the existence of
beverages in the food service establishments, here are few places the focus of
which is on the service of their beverages. Food choices to “pick-on” while
partaking of their drinks are the secondary product in these places.
Type of Food Service Brief Description
Bars, nightclubs, and pubs These establishments also served food
but strictly speaking, they mainly
focus on serving beverages, with
alcoholic content, such as scotch,
brandy, rhum, tequila, gin, vodka,
beer, ale, and other occasional wine.
Alternative beverages are occasionally
made available for those who do not
wish to “drink”.
Wine Bars Unlike Bars and pubs, wines are
exclusively served in establishments
of this type.
Coffee Houses and Tea Rooms There are snacks served in these
places but the “star” of the show is
the array of choices for coffee or
tea products. Ambiance is normally
warm and welcoming, encouraging
friends to sit and chat. Sometimes, the
snacks served are more on desserts as
these go well coffee and tea.
