Title: TOCINO
Performance Objective: Provided the following supplies, tools & materials you should
be able to process tocino following the standard procedure.
Materials: Meat Material: Household measure Wt. in grams
Pork lean, pigue or
Kasim, sliced ¼ inches thick 1,000g.
Extenders:
ISP,hydrated 6.0g ISP powder 30.0g
Chilled water 24g water 200.0g
Curing Mix:
Salt, refined 21/2teaspoon 12.0g
Curing salt ½ tsp 2.0g
Phosphate 1 tsp 3.0g
Water ¼ cup 62.0g
Seasoning Mix:
Sugar, refined 9-12 tbsp. 90-120g
Garlic, chopped 2tbsp. 30.0g
Anisado wine 2 tbsp. 18.0g
Pineapple juice 2 tbsp 34.0g
MSG ½ tsp. 2.0g
Food color as desired 2.0g
Packaging Material:
Polyethylene bag, 6”x8” (for ½ kg. package)
Ordinary plastic 8”x11”
Tools/Equipment: Mixing bowl/basin, wooden ladle, digital weighing scale,
knife, cutting board, impulse sealer, hand gloves/PPE, product

Procedure:
1. Select good quality raw materials.
2. Sliced meat materials ¼ inch thick.
3. Hydrate ISP powder in water. Mix until smooth and glossy.
4. Measure/weigh curing mix and seasonings.
5. Mix hydrated ISP with the meat until well blended.
6. Add curing mix and blend well.
7. Add the seasoning mix and continue mixing until thoroughly blended.
8. Cure mixture either at room temperature, 8-12 hours, or refrigerator temperature, 1-2 days.
9. Package into desired weights and seal.
10. Freeze
