Recipe Title:Ginger Beer
Ingredients:To make the ginger beer plant
2 oz bakers yeast
2 level tbsp caster sugar
2 level tbsp ground ginger & water

For feeding
10 level tsp ground ginger
10 tsp caster sugar

after 10 days
16 oz caster sugar (in 1½ pt water)
strained juice of 2 lemons

6 pints cold water


Method:Blend 2 oz fresh baker’’s yeast with 2 level tbsp caster sugar until they
cream and form a liquid

Add 2 level tbsp of ground ginger and water. Stir well and place in a large
jar with a loose lid (a cafetiere works well)

Daily for 10 days…….


Feed the ginger beer plant with 1 level tsp ground ginger and 1 tsp caster
sugar and stir very well

After 10 days
Dissolve 16 oz caster sugar in 1½ pts water. Bring to the boil, cool, and
add the strained juice of 2 lemons.

Strain the plant through muslin (keep the sediment) and add the liquid
sugar and lemon juice together with 6 pints of cold water. Stir well.

Bottle at once in strong screw-topped bottles.

Notes:The sediment retained can be used to start the process again and make
more ginger beer (start with blending the sediment with 2 level tsp caster
sugar and ½ pint water, then feed for 10 days etc)
