CHAPTER 1

INTRODUCTION

Abstract

The Ipomoea Aquatica, most widely known as Kangkong or Water Spinach,


is known for being a great provider of vitamins and minerals. Kangkong is a great
source for Vitamin-A which is essential for the health of skin, hair, and vision.
Another vitamin that has a large presence in Kangkong is Vitamin-C which is
great for protecting the body from various diseases. Apart from vitamins,
Kangkong is a leading source of vital minerals such as iron, magnesium, and
calcium.

Kangkong or Water Spinach may be used in a wide range of cuisines. These


are popular elements in table-side preparations. Kangkong (Ipomoea Aquatica) as
a healthy snack is the main topic of our investigatory project. The purpose of this
study is to find out how important kangkong is to our body. This study also
provides an alternative healthy snack, kangkong, an edible plant which can be a
low-cost ingredient for a healthy snack and is not difficult to grow providing the
soil is rich in organic matter and is relatively a low-maintenance plant.

BACKGROUND OF THE STUDY

The Convolvulaceae family’s water spinach (Ipomoea Aquatica) is a major


aquatic or semiaquatic vegetable that grows naturally in Asia and the Southwestern
Pacific Islands during the summer and autumn. Water Spinach is a green vegetable
that is native to tropical regions and has a strong tolerance for heat and moisture.
Essential amino acids, vitamin A, vitamin c, and iron, as well as polyphenols such
as carotenoids and chlorophylls, are all abundant in the plant.

Ipomoea Aquatica is most commonly grown in East, South, and Southeast


Asia. It flourishes naturally in waterways and requires little care. It is used
extensively in Indonesian, Burmese, Thai, Lao, Cambodian, Malay, Vietnamese,
Chinese, and Filipino cuisine, especially in rural or kampung (village) areas. The
vegetable is also extremely popular in Taiwan, where it grows well. During the
Japanese occupation of Singapore in World War II, the vegetable grew remarkably
easily in many areas, and became a popular wartime crop. Water Spinach has been
found to be cultivated in eighteen countries such as Philippines, Taiwan, and
Cambodia.

Water Spinach is also potentially suitable for cultivation in greenhouses in


more temperate regions. In non-tropical areas, it is easily grown in containers
given enough water in a bright sunny location. It readily roots from cuttings. Water
Spinach is ideal for sub-tropical and tropical climate. High soil moisture is
beneficial for the growth.

STATEMENT OF THE PROBLEM

This study aims to determine the feasibility of Water Spinach (Ipomoea


Aquatica) as an alternative semi-organic chip.

Specifically, this seeks to answer the following:

1. What is the profile of the respondents in terms of:

2. Is Kangkong effective in terms of:
2.1 Aroma
2.2 Color
2.3 Taste
2.4 Texture
3. Is there a difference between “Kangkong Chip” from the
“uncommercialized vegetable chip” in terms of:
3.1 Aroma
3.2 Color
3.3 Taste
3.4 Texture
4. Based on the findings, can the “kangkong chip” be consumed?

Hypothesis

Ho1: Kangkong (Ipomoea Aquatica) is not a feasible as a vegetable chip.


Ho2: There is no significant difference between Kangkong Chip and Other
Vegetable Chip.

General and Specific Objectives


The general objective is to assess the water spinach will grow in a
short-period of time, and its health benefits. The reasons why we conducted this
research is to verify if the water spinach can be an alternative healthy snacks
along with the acknowledge that this experiment is tremendously easy to make
especially during this pandemic, we cannot spend too much money. This
research will furthermore discuss how water spinach can turn into a healthy
snack.

SIGNIFICANCE OF THE STUDY

In this study, we want to prove if the potential vegetable Water Spinach can
also be made into a chips

This study is beneficial to the population because Kangkong chips are high
in carrot, vitamin A, iron, calcium, and they are inexpensive, so even those on a
restricted budget may get them.

This research can also contribute to knowledge by reminding the audience


that even the most unusual ingredient, vegetable Kangkong, can be used to make a
variety of chips.

SCOPE AND DELIMITATION


This study was conducted in Consolacion National High School – Evening
Class Senior High School Department at Laray, Nangka, Consolacion, Cebu. The
participants of this study were the 6 teachers of the school.

The researchers aimed to determined if the water spinach can be an


alternative semi-organic chip. The researchers conducted a survey that contains
questions regarding to the topic. The study was completed within one (1) month.

DEFINITION OF TERMS

Kangkong – a semi-aquatic tropical plant, used as a leaf vegetable. Also known as


water spinach, river spinach, water morning glory, or by the more
ambiguous names Chinese Spinach, Chinese watercress, Chinese
convolvulus or swamp cabbage.
Alternative – (of one or more) available as another possibility
Organic – natural or related to nature
Chip – a thin slice of food, made crisp by being fried, baked, or dried and eaten as
a snack
CHAPTER II
REVIEW OF THE RELATED LITERATURE

The swamp cabbage of kangkong, Water Spinach (Ipomoea Aquatica) has


numerous health advantages. Despite its reputation as poor man’s vegetable,
Kangkong is high in carrots, vitamins, and minerals, and all of which are
beneficial to one’s health.

Kangkong is a good source of carotene, which the body can convert to


vitamin A. Kangkong is beneficial to those with hypertension in particular. It helps
eliminate fatty deposits in the blood vessels when it is ingested rough age.

In the Philippines, Kangkong is abundant, particularly in flows and moist


soil. While the aquatic kangkong grows all year, it can grow significantly quicker
during the rainy season in specific proportions of the Brgy. Waterways. Its
presence indicates that the river, which was long assumed to be dead, may still
support biodiversity.
The Philippines, where ‘adobong kangkong’ is a common dish, have a large
population of kangkong, which is a staple part of local cuisine. To add flavour,
some people and other vegetables, spices, meat, or tofu (known locally as tokwa).
Unfortunately, the kangkong is considered an unpleasant odors herb because it
messes water ways in some areas. The plant is also used to prepare food and many
cuisines.

After visiting or conquering various Asian countries, European settlers


helped spread the plant worldwide, according to a report by Daniel Austin from
the Ethnobotany Research and Applications. While there have been few research
on the nutritional benefits of kangkong, it is usually believed that it is high in
vitamins and minerals.

CHAPTER III
METHODOLOGY

RESEARCH DESIGN

We conducted our research using an experimental design. It is a step-by-step


guide to help the researcher test his hypothesis by drawing reliable conclusions
regarding the links between independent and dependent variables. It is the
conceptual framework within which the experiment is carried out.

RESEARCH LOCALE
The survey was conducted in Consolacion National High School – Evening
Class Senior High School Department at Laray, Nangka, Consolacion, Cebu, while
the experiment was conducted in a researcher’s house kitchen.

RESEARCH INSTRUMENTS

• Frying Pan
• Mixing Bowl
• Whisk
• Tongs
• Blender

RESEARCH PROCEDURE

• Remove the kangkong leaves


• Wash in water and dry
• Mix the egg, water, cornstarch, flour, salt and pepper in a bowl
• In a blender, combine the kangkong leaves
• Coat the kangkong leaves to the mixed condiments
• Heat cooking oil in a pan
• Fry the leaves until crispy and golden brown with the batter
• Strain the cooked pieces for excess oil
• Cut the cooked pieces into a chips
• Serve with Mayonnaise, Gravy, or Ketchup

Chapter V

Summary

Today's youth are becoming more fond of fast food and junk food while becoming less familiar
with vegetables, which is why we did a study to help the public develop a taste for nutritious
foods. The vegetable on which we concentrated was kangkong ipomoea Aquatica, which is
extremely healthful. The goal of the study is to see if, in addition to fruit, delicious, healthy chips
may be converted into vegetable kangkong.

We took the mean of the ratings given by each respondent under each area and analysed it to see
if it was strongly disagree, disagree neither disagree nor agree, agree, or strongly agree so that
we could establish whether the chips were okay for students to eat or not. The data are then
plotted on a graph.

Conclusion

When we received the results of our surveys to see if kangkong chips were acceptable to
consume by the teachers of Laray, Nangka, Consolacion SHS EC, the mean score was
interpreted as acceptable. In terms of taste, Kangkong chips are acceptable; but, in terms of odor,
texture, and color, they are neither acceptable nor undesirable.

Recommendation
Since the kangkong has this natural green colour and natural leafy smell, we urge that the
researchers adjust the colour, odour, and texture to make it more appropriate for eating in future
study investigations. Make it more appealing to everyone, particularly children, in order to
increase interest in it.
