This document contains data from an experiment measuring the change in mass and volume of potato cores submerged in different molar concentrations of sucrose solution. It shows that potato cores generally increased in mass and volume in lower molarity sucrose solutions between 0.0M and 0.2M, and decreased in mass and volume in higher molarity solutions of 0.6M and 0.8M, with the highest percentage changes occurring in the 0.2M and 0.1M solutions.
