Background of the study.

Valenciana.

The origin and different versions of the famous Valenciana dish from General Trias City, Cavite.
Valenciana is a classic Filipino favorite that is usually enjoyed during special occasions and
gatherings. Through research, I will attempt to uncover the history behind this delicious dish, as
well as how it has evolved over time and the different ways it is prepared and served.
Additionally, I will explore the unique culinary culture of Cavite and the importance of Valenciana
to the local community. The city of General Trias, formerly Malabon Trias, is known for their
Valenciana dish, which they inherited from their ancestors during the Spanish era.

Valenciana, which has become part of the daily life of every Gentriseño, can be bought at every
carinderia, in the market, and at snack houses in the town valenciana with toppings, menudo,
tapa, binagoongan, and bopis for P50. From a small carinderia, they transferred to a new public
market in 2000 in Barangay Sampalukan, until it gradually became known and established as a
branch along National Road in Barangay San Juan 1 in October 2020. It’s also become a
livelihood of some locals after winning in the annual Valenciana cooking contest. It is held
during the yearly festival and founding anniversary of the locality every 13th of December.

In celebration of its history, heritage, and cooking skills of locals, the City of General Trias in
Cavite staged on Dec. 13 its 6th Valenciana Festival, a part of its 270th founding anniversary
and 3rd cityhood anniversary. Mayor Antonio Ferrer and Congressman Luis “Jon Jon” Ferrer IV
spearheaded the festival, starting with the wreath-laying ceremony at the General Mariano
Closas Trias monument.

General Trias City is a first-class component city in the province of Cavite, Philippines. It is known for its
rich history, culture, and culinary heritage. One of the most famous delicacies in the city is the
Valenciana, a rice dish that is cooked with various ingredients such as chicken, pork, chorizo, and
vegetables. Valenciana is a popular dish that is served during special occasions and celebrations, and it is
also commonly sold in local food establishments. Despite its popularity, there is limited information
available on the origin and different versions of Valenciana in General Trias City.

The recipe and preparation of Valenciana may vary from one family or establishment to another, and
there is no comprehensive documentation or analysis of these variations. Therefore, there is a need for
a research study that aims to determine the origin and the different versions of Valenciana in General
Trias City. This study is important because it will contribute to the documentation and preservation of
the local culinary heritage and cultural identity of Gentri, Cavite. It will also provide insights into the
history and evolution of Valenciana as a traditional delicacy in the area. The findings of the study may
also be useful in promoting local tourism and economic development by highlighting the unique and
distinct culinary culture of San Francisco De Malabon.
