Shíwù shípǔ ( Food recipe)

Cài míng ( Dish Name ) :- Niúròu hé xī lánhuā ( Beef and Broccoli )

Yuánliào ( Ingredients )

1) ⅓ Bēi háoyóu - ⅓ cup oyster sauce


2) ⅓ Bēi xuě lìjiǔ - ⅓ cup sherry
3) 2 Cháchí yàzhōu (kǎo) zhīmayóu - 2 teaspoons Asian (toasted) sesame oil
4) 1 Cháchí jiàngyóu - 1 teaspoon soy sauce
5) 1 Cháchí báitáng - 1 teaspoon white sugar
6) 1 Cháchí yùmǐ diànfěn - 1 teaspoon cornstarch
7) ¾ Bàng niúròu yuán niúpái, qiè chéng 1/8 yīngcùn hòu de tiáo - ¾ pound beef
round steak, cut into 1/8-inch thick strips
8) 3 Tāngchí zhíwùyóu, rúguǒ xūyào, zài jiādiǎn - 3 tablespoons vegetable oil,
plus more if needed
9) 1 Piàn xīnxiān shēngjiāng gēn - 1 thin slice of fresh ginger root
10) 1 Bàn dàsuàn, qù pí dǎo suì - 1 clove garlic, peeled and smashed
11) 1 Bàng xī lánhuā, qiè chéng xiǎohuā - 1 pound broccoli, cut into florets

Bùzhòu 1 (Step 1)

Jiāng háoyóu, xuě lìjiǔ, máyóu, jiàngyóu, táng hé yùmǐ diànfěn fàng rù wǎn zhōng
jiǎobàn jūnyún; jiǎobàn zhídào táng róngjiě. ( Whisk
together oyster sauce,
sherry, sesame oil, soy sauce, sugar, and cornstarch in a bowl; stir until
sugar has dissolved.)

Dì 2 bù ( Step 2)

Bǎ niú páifàng zài yīgè qiǎn wǎn lǐ. Jiāng háoyóu hùnhéwù dào zài ròu shàng, jiǎobàn
jūnyún, ránhòu zài bīngxiāng zhōng yān zhì zhìshǎo 30 fēnzhōng. ( Place
steak in a
shallow bowl. Pour oyster sauce mixture over meat, stir to coat, and
marinate for at least 30 minutes in the refrigerator.)

Dì 3 bù ( Step 3)
Zài chǎo guō huò dà píngdǐ guō zhōng yòng zhōng gāowēn jiārè
zhíwùyóu. Jiārù jiāng hé dàsuàn; fāchū sī sī shēng yuē 1 fēnzhōng yǐ
tiáowèi yóu, ránhòu qǔchū bìng diūqì. Bàn rù huāyēcài. 5 Dào 7
fēnzhōng, jiǎobàn zhì liàng lǜsè, jīhū biàn ruǎn. Bǎ xī lánhuā cóng guō lǐ
ná chūlái fàng zài yībiān. ( Heat vegetable oil in a wok or large skillet
over medium-high heat. Add ginger and garlic; let sizzle for about 1
minute to flavor oil, then remove and discard. Stir in broccoli. Toss and
stir until bright green and almost tender, 5 to 7 minutes. Remove
broccoli from the wok and set aside.)

Dì 4 bù ( Step 4)

Rúguǒ xūyào dehuà, wǎng guō lǐjiā yīdiǎn yóu, ránhòu jiārù niúròu hé
yān liào. Jiǎobàn huò jiǎobàn, zhídào jiàng zhī biàn chóu biàn liàng, ròu
bù zài chéng fěnhóng sè, dàyuē 5 fēnzhōng. Bǎ xī lánhuā fàng huíguō lǐ;
jiǎobàn zhì rè tòu, dàyuē 3 fēnzhōng. ( Add a little more oil to the wok, if
needed, then add beef with marinade. Stir and toss until sauce thickens
and turns shiny and meat is no longer pink, about 5 minutes. Return
broccoli to the wok; stir until heated through, about 3 minutes.)
