CHAPTER 1

INTRODUCTION

A canteen is a place in school where food and beverages are sold to students/pupils.
Schools use the canteens to fill the gap of hunger and nutrition in schools. Schools are
bound to protect the safety of its students. All necessary measures are considered to
ensure that the students are safe. Safety means that the students are free from any
physical, emotional, psychological, social, and environmental violence. Safety also
could mean that health of the students is given utmost priority in planning for the
programs, activities, and projects in school. Health is the state of being free from
illness or injury (Oxford Languages).

Health is one of the priorities of a school canteen, the food and beverages sold must
be safe to eat and have nutritional value. Preparing food must be done in a clean
environment to avoid contamination.

According to DO 8, S. 2007, the school canteen shall help eliminate malnutrition

among pupils/students. As one of the purposes of a school canteen is to solve
malnutrition among students, as not all students get the necessary nutrients every day,
so a school canteen should try to fill in the gap to solve that problem.

The same DepEd Order states that service should be the main consideration for
operating a school canteen. Profit shall only be secondary since the clientele are
pupils/students who are dependent only on their meager allowance from their parents.
School canteens should not operate under the thought of profit as it states and should
consider that the students only have a small allowance. With that in consideration a
canteen should provide services that students can afford.

DO 13, S. 2017 aims to make available healthier food and beverage choices among
the learners and DepEd personnel and their stakeholders. The availability of healthier
food and beverages in canteen menus will give not only students but also teachers,
and staff that utilize the canteen as a food source, with more nutrition and healthier
options.

Along with health, quality and efficiency of the canteen and its sold products, service
should be addressed as well, as just getting healthy food is not enough if you can’t

1
buy it before the bell rings and you get back to class. In the quote by George Eliot
“No man can be wise on an empty stomach”.

Our school canteen has been in operation since the opening of classes last September
2022. It is managed by teachers and hired workers in a cooperative of Mabini Farm
School. It sells snacks (biscuits, sandwiches, etc.) and drinks (juice). Most of the
student body buys form the canteen due to not being allowed to go out and buy from
outside vendors.

In this context the researcher’s aims to assess the satisfaction level of grade 12
students on our school canteen, in the eyes of Grade 12 students of Mabini Farm
School.

STATEMENT OF THE PROBLEM

The canteen has issues with service, price, space, location, efficiency, giving of
feedback from customers, and cleanliness. Our canteen faces these problems with no
plans of improvement any time soon. Our subjects the grade 12 students have
expressed their dislikes about our new canteen, those have been stated in the first
sentence above.

1. What is the profile of Grade 11 students in Mabini Farm School when grouped
according to:

a. Sex

b. Specialization

2. What is the satisfaction level of the Grade 11 students on the new canteen when
taken as a whole and when grouped according to:

a. Sex

b. Specialization

STATEMENT OF HYPOTHESIS

The following hypotheses will be advanced in this study:

2
1. There is no significant difference in the satisfaction level of the Grade 11 students
in terms of sex (male and female).

2. There is no significant difference in the satisfaction level of the Grade 12 students

in terms of specialization.

CONCEPTUAL FRAMEWORK OF THE STUDY

This study aims to discover the problems that plague our school canteen.

Distance, distance decides how good of a service can the canteen give to the students.
This is mainly a problem for senior high students that have classrooms in the back
area of the school.

Efficiency, the speed as to how fast the staff can accommodate customers. An issue
on our canteen that we normally experience. As there are roughly 1000 students in our
school, there’s not enough staff to accommodate all the students in an efficient
manner.

Physical facilities, the space needed to accommodate the students that go to the
canteen every-day is not enough. We have observed that one of the major problems
present in our school canteen is the insufficient space that the canteen is using.

Providing food and beverages with health benefits is a goal of a school canteen.

Prices, we need to consider the students when it comes to prices of the food in the
canteen, because not all students can afford such prices.

With that in consideration a
canteen should provide services that students can afford

This research can help our canteen to
expand and to solve some issues that it faces such us prices, limited space, distance,
and efficiency.

Students- students will benefit from this because if the canteen reforms its qualities,
they will have better canteen service.

Canteen manager- the canteen manager will be able to use this study to further
improve the canteen.

School admin- the school admin can use this study as a basis for canteen
improvement.

Future researchers- for the future researchers that will have the same topic they will be able to
use this study as a reference and can even add it to their related literature.

DEFINITION OF TERMS

The following terms are defined conceptually and operationally:

Canteen

4
-According to Merriam Webster this refers to the facility as to which the students buy
food and beverages but have undergone some changes due to certain events that have
occurred throughout the years.

-The canteen in Mabini Farm School.

Student

- According to Merriam Webster, it is an attentive and systematic observer, the one

who attends a school.

-The grade 11 HUMSS, Agriculture and ICT.

Satisfaction.

-According to Merriam Webster fulfillment of one’s wishes, expectations, or needs, or

the pleasure derived from this.

-The satisfaction of the subjects on the state of the canteen.

SCOPE AND LIMITATION OF THE STUDY

This study focuses on the satisfaction level of grade 11 students of Mabini Farm
School on the new canteen. The subjects of this study will only be conducted on the
grade 11 HUMSS, ICT, and Agriculture. This study will only involve the grade 11
students and will only be conducted in Mabini Farm School. To those who do not fall
as part of the grade 11 will not be included in this study. This study will only cover
the student’s thoughts on the new canteen as well as their recommendations for
improvement. The researchers will interview the selected 30 respondents for the study
and will ask questions from a pre-made questionnaire. By using this system, we will
only get the satisfaction level of the grade 11 students on the new canteen.

Analysis of data will be based solely on the response of the respondents.

REVIEW OF RELATED LITERATURE AND STUDIES

Canteen Service Quality and Student Satisfaction Study

As stated in Canteen Service Quality and Student Satisfaction Study by Galabo

(2019), “A canteen is a place where food is to be served and eaten, where different
snack and drink products are sold. A school utilizes a canteen to meet the food and
nutritional needs of its students for them to have the energy in to accomplish the task
that they would do for the day”. A student’s day at school is as hectic as it is rough, a
good diet is needed to supply them with enough energy to go about their day, it is also
stated in the study that a school canteen is used to meet the food and nutritional needs
of its students in order for them to have the energy in to accomplish the task that they
would do for the day.

Customer satisfaction is a customer's perspective based on expectation and then post

purchase experience. Customer satisfaction is an evaluation of products or services
quality level that fulfill the customer expectations. Satisfaction means the feeling an
individual gets when his or hers wishes, expectations or needs are fulfilled, and the
pleasant feeling that follows from it (Galabo, 2019). Satisfaction comes in pair with
efficiency, efficient service allows for more positive feedback from the customer in
this case students. As students only have little time to buy the food they need until
they go back to class, efficient service is needed. In most cases with canteens, they are
always packed with students trying to get food, this is a major issue in efficiency.
Quality is the standard of something as measured against other things of a similar
kind; the degree of excellence of something. Food quality is limited in a canteen due
to budget, but food and beverage products should be at least in the minimum quality
in terms of nutrients and state. State being the edibleness of a food or beverage.

Study of Customer Satisfaction at Canteen of Sahid University Jakarta

As stated in STUDY OF CUSTOMER SATISFACTION AT CANTEEN OF SAHID

UNIVERSITY – JAKARTA by Intan Nurul Azni, Giyatmi, Julfi Restu
Ameliaeveloping, interest in buying nutritious and healthy food among customer,
making it possible for them to enjoy nutritious and healthy food at affordable prices
during the day. Canteens should not just have nutritious food in variety on the menu
but also, they should be sold at an affordable price. As mentioned in the DO 8, S.
2007, “a canteen should provide services that students can afford.”

Policy and Guidelines on Healthy Food and Beverage Choices in Schools and in
Deped Offices
1. Make available healthier food and beverage choices among the learners and DepEd
personnel and their stakeholders.

2. Introduce a system of categorizing locally available foods and drinks in accordance

with geographical, cultural, and religious orientations.

3. provide guidance in evaluating and categorizing foods and drinks; and provide
guidance in the selling and marketing of foods and beverages in schools and DepEd
offices, including the purchasing of foods for school feeding.

Food Handling and Food Safety in School Canteens

As a registered food business, your canteen must have a food safety supervisor. This
is someone who has completed mandatory food safety training and is able to
supervise other people handling food. The canteen manager is usually the food safety
supervisor. Food safety supervisor requirements are outlined on the ACT Health
website. Food handlers must have knowledge and skills appropriate to the types of
food they are handling. All people working in a canteen (including volunteers) should
have a basic understanding of food hygiene and temperature control. Using food
safety posters in the canteen is a good way to remind people of basic food safety
requirements. It is strongly encouraged that all staff, including volunteers, do the I’M
ALERT free online food safety training course.

Assessment of Food Quality in School Canteens: A Comparative Quantitative

Study between Primary and Secondary Schools in Malaysia

Stated by Leng Huat Foo, Ying Jing Tan (2021) Schools are an important food
environment to cultivate and promote healthy food choices and practices among
children and adolescents. The aim of the present study was to assess the type and
quality of food and beverages sold in school canteens in public primary and secondary
schools in Kelantan, Malaysia. Eligible schools were randomly selected from the list
of all schools and detailed information of all food and beverage items sold in the
school canteens were collected during school days. Food and beverages were

7
classified based on food groups derived from the Malaysian Food Dietary Guideline
and the Recommended Foods for Healthy Cafeteria Guideline.

A Study on Impact of Gender Differences on Customer Satisfaction, Case of

Educational Sphere

As stated by Ahmed Mansoora (2017) in his study: Delighting a customer is one of the
most important factors for every business in the world. Satisfying a customer in
today’s competitive business environment is not an easy task when customer’s
bargaining power is very high due to some substitutes available in the market with
different product offers. Customer satisfaction is a key to any business to be
successful and even to its survival too. Customer satisfaction is a composite emerging
from many factors. It has been studied with different themes like the correlation of
customer satisfaction with service recovery and failure, quality of the product or
service, and such other themes. In this study, the role gender of customers as well as
employees can play in the process of service encounter interactions on the customer
satisfaction in the educational sector has been researched.

Service encounter is a time in which customer interacts directly with the service. As
this field of service marketing is a kind of ‘art’ and related to human beings as being
the part of the product of sometimes being a product themselves in service terms, the
findings by the studies in the same domain have produced different results. In some
studies, gender difference has a significant impact on customer satisfaction, while in
some cases it does not has a significant impact. Whereas it’s also observed that in
studies where the overall impact was not significant, still there exists a difference in
male and female customers or the staff members’ perceptions about the satisfaction or
expectation levels with the service quality. This concept needs to be applied in
different context as the context as well as service type itself also has changed results
to produce, so this could be a significant factor to study human mind’s perceptions
due to the change in gender because male and female psychology differs a lot and
reactions for the same thing in the same situation is different for both genders. So this
change's study in an educational study must be done as teachers and students are very
important players in the society as they shape up the whole society in the longer run
and apply what they learnt and developed in educational

8
LEVEL OF SATISFACTION OF GRADE 12 STUDENTS IN THER CHOSEN
ACADEMIC TRACK IN CENTRAL COLLEGES OF THE PHILIPPINES

As said by Rivera (2018) in her study, several theories and study have been analyzed
to understand the dimension that will influence student’s satisfaction. First, Clemes
(2008) also developed a three-factor theory with different sub-factors which includes
quality of the teaching staff, administrative staff, outcome quality (learning
assessment), and good physical environment. Fourth, is the Investment model theory
explaining the relationship between student satisfaction and academic performance.
Satisfaction increases when the rewards of study increase (higher grades). When costs
like financial and time constraints are lower and alternate options are low, satisfaction
was lower (Hatcher, Kryter, Prus, & Fitzgerald, 1992). Continuing learning intention
or a specific desire on the part of the learner to learn, is related to learning experience
and to the content and completion of a learning session. Zhou (2016) on her study of
“Empirical Study on University Curriculum Satisfaction of University Graduates”
states that curricula sin universities should meet the needs of society and occupations.

PROMOTING SAFE FOOD HANDLING

1. Keep clean.
2. Separate raw and cooked.
3. Cook thoroughly.
4. Keep food at safe temperatures.
5. Use safe water and raw materials.

These are “Five keys to safer food”, which were developed to educate safe food
handling behaviors to all consumers and food handlers.

Each year, 1 in 10 people get ill by eating unsafe food. While food safety is a shared
responsibility, individual consumers and food handlers play a huge role in preventing
foodborne diseases. “Five keys to safer food” messages were therefore developed and
validated by an independent body of international scientists in 2001, to empower all
consumers worldwide with a simple and applicable set of actions to prevent
foodborne diseases.

9
FOOD SAFETY AT HOME

4 Basic Steps for Food Safety

Each year millions of people get sick from food illnesses which can cause you to feel
like you have the flu. Food illnesses can also cause serious health problems, even
death. Follow these four steps to help keep you and your family safe.

1. Clean

Always wash your food, hands, counters, and cooking tools.

 Wash hands in warm soapy water for at least 20 seconds. Do this before and
after touching food.
 Wash your cutting boards, dishes, forks, spoons, knives, and counter tops with
hot soapy water. Do this after working with each food item.
 Rinse fruits and veggies.
 Do not wash meat, poultry, fish, or eggs. If water splashes from the sink in the
process of washing, it can spread bacteria.
 Clean the lids on canned goods before opening.
2. Separate (Keep Apart)

Keep raw foods to themselves. Germs can spread from one food to another.

 Keep raw meat, poultry, seafood, and eggs away from other foods. Do this in
your shopping cart, bags, and fridge.
 Do not reuse marinades used on raw foods unless you bring them to a boil
first.
 Use a special cutting board or plate for raw foods only.
3. Cook

Foods need to get hot and stay hot. Heat kills germs.

 Cook to safe temperatures:

o Beef, Pork, Lamb 145 °F

10
o Fish 145 °F
o Ground Beef, Pork, Lamb 160 °F
o Turkey, Chicken, Duck 165 °F
 Use a food thermometer to make sure that food is done. You can’t always tell
by looking.
4. Chill

Put food in the fridge right away.

 2-Hour Rule: Put foods in the fridge or freezer within 2 hours after cooking or
buying from the store. Do this within 1 hour if it is 90 degrees or hotter
outside.
 Never thaw food by simply taking it out of the fridge. Thaw food:
o In the fridge
o Under cold water
o In the microwave
 Marinate foods in the fridge.

SYNTHESIS

Student satisfaction is the main goal of a school canteen, service, efficiency, food and
beverage quality are all being strived by the canteen staff. There are limitations to this
however such as budget, location, and time. As budget determines the quality of
products sold becomes limited this also means that there won’t be much room for
healthier food and beverages, as those cost more to make than just pre-packed foods.
Location, decides the number of customers can be accommodated and how efficient
the staff can serve customers, let’s take for example our school Mabini Farm School.
There is only one canteen, that is shared by the junior and senior high school students.
With their only being one canteen with a relatively small area to accommodate around

11
an estimate number of 1000 of students. The canteen is accessible to junior and senior
high schoolers, but it’s not as accessible to the senior high schoolers, as distance is a
major variable that affects our access.

A school canteen should be able to accommodate the needs of the students and when
doing so should be able to give the students quality service. The canteen should be
hygienic, well-staffed, spacious to accommodate the number of students, must have a
variety of food and beverages with nutritional value, and the sold food and beverages
must be affordable or be sold within a reasonable for the students.

CHAPTER 3

METHODOLOGY

This chapter deals with the research design, participants of the study, research
instruments, its validity and reliability, data-gathering procedures, data analysis and
statistical treatment used to answer the problems presented in this study.

RESEARCH METHOD

In this study, the researcher employed the descriptive research method. The
researchers considered this method as the most appropriate because this involves the
description of the perceptions of Grade 12 students on the quality of the new school
canteen. According to Latin and Berg as cited by Dioneza (2013), descriptive research
is typified by observations or descriptions of the status of a condition or situation.
Investigators using this method do not manipulate variables or make things happen.

RESPONDENTS OF THE STUDY

The participants of the study are the grade 12 HUMSS, Agriculture, and ICT student
as we needed the opinions of the two genders to see if there is a difference of
satisfaction when the variable gender is in play.

Our subjects are students from the three sections in grade 12 HUMSS,
AGRICULTURE, and ICT, as we were not sure if the different sections had higher or
lower views on the state of our new canteen.

With the variety of sections that deal with different specialties might have different
views on our canteen such as HUMSS that might look at it form an economic
standpoint, or ICT that might look at it from a technical standpoint and
AGRICULTURE that might see the problems are due to manpower shortage, these
variables that makes us different give each respondent interesting views.

LOCALE OF THE STUDY

This research will be conducted in Mabini Farm School located at Barangay Mabini
Cadiz City. The livelihood of the barangay is agriculture farms, specifically sugarcane
plantations. The distance of Brgy. Mabini is approximately 11.2 km from Cadiz City.

Figure 2: Vicinity of Barangay Mabini

DATA GATHERING INSTRUMENT

The researchers will use a survey questionnaire to get the needed information and data
for the research. The questionnaire will include the satisfaction level of the subjects in
certain aspects of the canteen. Doing this will determine if the subjects have any
dissatisfactions.

VALIDITY AND RELIABILITY OF THE RESEARCH INSTRUMENT

The research instrument used in this study was subjected to content validation using
experts in the field. This was undertaken by presenting the research instrument to the
5 validators considered experts in their field of specialization. These experts went
over the research instrument item-by-item and judge the suitability and
appropriateness of the questions. Recommendation and suggestions for improvement
were taken into consideration and was given due consideration by the researchers.

Teacher 2 is a graduate from Northern Negros State of College of Science and
Technology (NONESCOST) a bachelor of secondary education, major in physical
science 2015-2016, with a master’s degree University of St. Lasalle and a Master of
Education Major in Natural Science 2019-2020

Teacher 3 is a graduate from Philippine Normal University a Bachelor of Secondary

Education Major in Mathematics, with a master’s degree of education major in
mathematics from the University of St. Lasalle.

With a total good and scates rating of 4.5 the research instrument used in this research
has a high enough rating for it to be called valid.

DATA GATHERING PROCEDURE

In the conduct of this study, permission from the respective authorities was asked by
the researchers for the conduct of the research instrument to the target respondents.

Afterwards the researchers asked the possible respondents if they were willing to
undergo a test for our research paper (no person was forced to be interviewed in the
making of this research paper).

STATISTICAL ANALYSIS OF THE DATA

Mean

According to the website Simplilearn.com, mean or average mean is one of the most
popular methods of statistical analysis. Mean determines the overall trend of the data
and is very simple to calculate. Mean is calculated by summing the numbers in the
data set together and then dividing it by the number of data points.

Percentage

According to the website Statistics Canada, percentages. One of the most frequent
ways to represent statistics is by percentage. Percent simply means "per hundred" and
the symbol used to express percentage is %. One percent (or 1%) is one hundredth of
the total or whole and is therefore calculated by dividing the total or whole number by
100.

total respondents. Followed by AGRICULTURE with 32 respondents that make up
30.48%, and ICT with 50 respondents they represent 47.62% of the respondents.

There’s less Humss students due to the specialization because the average needed is
85 above, and the college degree that they want to pursue is education. There’re more
ICT students due to their interest, or they want to work after they graduate grade 12.
According to the grade 12 Agriculture, they picked this specialization due to the
reasons as it is the main source of income in Brgy. Mabini, and with this strand they
can find work much easier.

In some studies, gender difference has a significant impact on customer satisfaction,

while in some cases it does not has a significant impact. Whereas it’s also observed
that in studies where the overall impact was not significant, still there exists a
difference in male and female customers or the staff members’ perceptions about the
satisfaction or expectation levels with the service quality. Mansoora (2017).

In every 1 female student that was a subject to our research there is 0.9 male students
that was a subject for the research.

CHAPTER 5

SUMMARY OF FINDINGS, CONCLUSIONS, IMPLICATIONS AND

RECOMMENDATIONS.

Summary of findings

After analyzing the data that we have gathered, it was found that there is a difference
in the satisfaction level of the Grade 12 students in terms of sex (male and female).
There is a difference in the satisfaction level of the Grade 12 students in terms of
specialization.

Conclusion

Based on the summary of findings the following conclusions were drawn.

1. Gender does influence the satisfaction level of the students. Although it’s not a
significant difference It does still show that the preferences of the sexes are different,
where the male subjects were mostly neutral on the subject, while the females were
satisfied and dissatisfied. Showing females are more sensitive to the subject while
males aren’t as much. This claim was further supported by the article entitled “A
Study on Impact of Gender Differences on Customer Satisfaction, Case of
Educational Sphere”, the article states that in some studies, gender difference has a
significant impact on customer satisfaction, while in some cases it does not has a
significant impact. Whereas it’s also observed that in studies where the overall impact
was not significant, still there exists a difference in male and female customers or the
staff members’ perceptions about the satisfaction or expectation levels with the
service quality.

2. Specialization makes a difference in satisfaction level. HUMSS and

AGRICULTURE are both neutral, but the difference in their total mean is significant
although both are neutral HUMSS has the lowest total mean out of all three
specializations this is due to them having the lowest amount of people, while ICT on
the other hand has the highest. ICT satisfaction level is satisfied mostly because of
their sheer numbers, however if all three specializations were to have the same
amount of people the results would be same all around. This claim was further
supported by the study entitled “LEVEL OF SATISFACTION OF GRADE 12
STUDENTS IN THER CHOSEN ACADEMIC TRACK IN CENTRAL
COLLEGES OF THE
PHILIPPINES” Lastly is Gottfredson’s theory (1981) of occupational aspirations are
reflection of one’s self-concept, his theory describes that students are attracted to
certain specialization because of their self-concept or how they perceived their selves
in the future using interest, attitudes, and skills that are strongly influenced by our
shared environment (e.g. family, peers, school, and community). However, continuing
learning intentions to take up future learning are strongly and consistently related to
current or recent experiences of learning and student’s satisfaction.

3. In conclusion the satisfaction of the grade 12 HUMSS, AGRICULTURE, and ICT

can be affected by the following sex (male and female) and specialization. These
factors affect how the subjects answered our questionnaire and affects they’re overall
satisfaction level.

Recommendation

Based on the conclusion and the summary of the findings, the researchers
recommends that a similar study may be conducted with a larger scale of respondents
that, not only, encompasses the grade 12 but also the other grade levels especially, the
newer students that have different look on the situation on the canteen, than us grade
12 that have seen the development of throughout the years. With different people
from different grade levels, we will be able to get a broader understanding, of just
how satisfied the student body is with the canteen.
1. For students understand that the canteen has some complications, the canteen won’t
know what these are if we don’t speak about them, to the canteen staff or
administrator. Being open to the staff and administrator about these complications
will make them know and will act on these for better improvement of the canteen.

2. For teachers as fellow people that use the canteen for everyday use, you have more
influence on the canteen, you have the power to make it improve.

3. Parents as your children go to school in Mabini Farm School, I recommend that

you help bring improvement for your children’s food and health needs whilst in
school.

4. A recommendation I have for the school admin and canteen manager, is that to
listen to the complaints of the students that use the canteen on the daily. For

24
improvement to happen one needs to listen to the masses to improve the canteen for
the better.

5. For the future researchers, use this study as a reference for your own research, get a
wider range of subjects and not just the grade 12. Get subjects from each area of the
school, this gives you mor insights and data for the study.
