How Temperature Affect

Enzyme Activities

Enzymes
Enzymes

 Are proteins that catalyze chemical reactions in the body. They are essential for many
physiological processes, including digestion, metabolism, and cell repair. Enzymes work
best within a specific range of temperatures, known as the optimal temperature. At
temperatures below the optimal range, the enzyme activity decreases, and at
temperatures above the optimal range, the enzyme activity increases.

 Are proteins that have a specific three-dimensional structure, and this structure is crucial
for their function. At higher temperatures, the bonds that hold the enzyme’s structure
together can break, causing the enzyme to change shape. This process is known as
denaturation. When the enzyme changes shape, it can no longer bind to its substrate,
and the reaction will not occur.
Temperature
Temperature

 Is a measure of the kinetic energy (energy of motion) of molecules.

4 Influence Of Temperature

 Thermal processes are important factors in the processing and storage of food because
they allow the control of chemical, enzymatic and microbial changes.

 Thermal processes are important factors in the processing and storage of food because
they allow the control of chemical, enzymatic and microbial changes.
 Undesired changes can be delayed or stopped by refrigerated storage. Heat treatment
may either accelerate desirable chemical or enzymatic reactions or inhibit undesirable
changes by inactivation of enzymes or microorganisms.

pathogens, are guaranteed, but still all undesired changes such as degradation of
vitamins are kept as low as possible.

Did you know: For human enzymes, the optimum temperature is around 37°C, normal body
temperature. A person who has a fever where body core temperature exceeds 40°C can be
in a life-threatening situation because such a temperature is sufficient to initiate enzyme
denaturation. The loss of function of critical enzymes, particularly those of the central nervous
system can result in dysfunction sufficient to cause death.
 In summary, temperature can affect enzyme activity by increasing or decreasing the
kinetic energy of the enzyme, causing the enzyme to denature, or changing the shape of
the enzyme. The optimal temperature for an enzyme is the temperature at which the
enzyme works best and is usually around 37°C in humans. However, the optimal
temperature can vary depending on the enzyme and the physiological conditions in
which it is found.
