LESSON # 29 COCKTAILS – PRINCIPLES / HEALTH AND SAFETY PRACTICES

PRINCIPLES FOR FASHIONING QUALITY COCKTAILS


1. Drinks should be made from good-quality, high-proof liquors so using the highest quality spirits
and liqueurs as well as fresh-squeezed juice is of the utmost importance.
2. Drinks should always sharpen and not dull the appetite. A cocktail by classic definition is an
aperitif and should therefore never have more than a touch of sweetness. Overly sweet rinks
dull the appetite so avoid using too much sugar, juice, cream or egg.
3. Drinks should be dry with sufficient alcoholic flavor but smooth and pleasing to the palate.
4. They should be pleasing to the eye.
5. They should be well-iced. This principle implies both the quality of ice and the amount of
stirring/shaking necessary. Using large, high density ice cubes is ideal.

HEALTH AND SAFETY PRACTICES


1. Always be clean, tidy and diplomatic.
2. Always rinse/wash bar equipment like cocktail shakers and straining after use, even between
drinks
3. Always wash and dry your hands frequently, especially after contact with citrus fruit/juices to
prevent hand dermatitis.
4. Look after your hands, especially your fingernails. Keep them short and if using nail polish, use
neutral colors.
5. Do not smoke or drink while working behind a bar, it is considered unsanitary an in many
countries, also illegal.
6. Do not allow champagne corks to “pop” on removal, this is of bad taste and dangerous.
7. Handle a glass soda siphon by the plastic or metal part only. The heat of your hand may cause
the glass to shatter
8. Never fill a glass to the brim.

Remember :
1. Most cocktails do not have water as an ingredient according to its recipe but if you think a mixed
drink needs a bit of water to get it’s taste right a ash. You may also add apple juice because it’s
fairly neutral taste.
2. Always handle a glass by its stem or handle (if it has one). This prevents your hand from
warming the drink. It also prevents finger marks left on the glass.
3. It is necessary to practice some of the techniques before actually mixing the cocktails. Cocktail
mixing requires practice to become perfect.
4. Do not add alcohol to ignite drinks nor leave them unattended. Light them where they pose no
danger to anybody else and ensure that no objects come into contact with any flames from the
drink. Always extinguish a flaming drink before consuming it.

V. GENERALIZATION:

It reflects the role of a “bartender” and/or a utility/back and may be part of the role of a bar attendant. It
covers four core competencies namely: 1) cleaning bar areas, 2) operating bar, 3) preparing and
mixing cocktails and non-alcoholic concoctions, and 4) providing basic wine services.
