- Subjective measurement : sensory evaluation

- Objective meas. : physical, chemical or microbiologycal

- Test Objective : to find the correlation between subjective
(sensory) & objective measurement (~instrument)
- Number of panelists:
• trained : 5 – 15 judges
• untrained : 15 – 25 judges
- Sample : 3 – 6 samples
- Procedure: Scoring test, rating
Determine the correlation of subjective &
objective measurement of jelly hardness.
Sensory evaluation : pressed & tasted.
Objective measurement: with Penetrometer
⇨ plate weight = 50 g, for 10 sec.
Jelly concentration: 0.50, 1.00, 1.25, 1.50,
2.00, 2.50%
✓ Convert scoring/rating scale → y axis
✓ From penetrometer ⇨ hardness score
(gr/cm2/det) ,duplo or triplo if
necessary → x axis
✓ Calculate the linier regression equation
& the coefficient correlation
✓ Plot the graph that shows the correlation
of subjective & objective measurement
y = a + bx
a = (Σy) (Σx2) – (Σx) (Σxy)
nΣx2 – (Σx)2
b = n Σxy – (Σx) (Σy)
nΣx2 – (Σx)2
r = n Σxy – (Σx) (Σy)
√{n Σx2 – (Σx)2} {n Σy2 – (Σy)2}
DATA
- Linear regression : y = a + bx
a = (26.92)(8.82) – (6.78)(25.30) = ??
6 (8.82) – (6.78)2

b = 6 (25.30) – (6.78)(26.92) = ??
6 (8.82) – (6.78)2

Equation : y = 9.48 – 4.4x

r = 6 (25.30) – (26.92) (6.78)

√{6(8.82) – (6.78)2} {6(143.77) – (26.92)2}
= - 30.72 = ??
√958.64
r2 = 0.98
- Compare r value with Table G16 ⇨ check if the correlation is significant at particular level

✓ Table value , df=4 :

○ 5% = 0.7293
○ 1 % = 0.8822
○ 0.05 % = 0.9741
✓ r > 0.05% → significant correlation at 0.05%
- Fig.1. Correlation Chart of Subjective & Objective measurement of jelly product.

Conclusion:
The chart shows that the higher the subjective rating the smaller the value from the objective
measurement. The correlation is significant at 0.05% level.
