Recipe for a brothy rice with seafood:

Ingredients:

3 tbsp of olive oil


1 tbsp of colorant
a bit of salt and saffron
3 tomatoes
1 green pepper
1 red pepper
3 pieces of garlic
a big onion
250 grams of clams
250 grams of shrimps
250 grams of squid
250 grams of cuttlefish
250 grams of mussels

instructions:
First, clean all the seafood, chop the squid and cuttlefish, boil the shrimps for the “fumé" that
we will use later. After that, make a stir fry with the vegetables, previously chopped in little
dices. Next, put the vegetables on the pan, once the oil is boiling. Once the stir fry is ready,
add all the seafood and shrimps (this must be peeled before being added). Let the clams
and mussels until they open. Cover the pan, and, when the clams and mussels get open,
add the “fumé” from the shrimps. Finally, add the colorant, a little bit of pepper, salt and
saffron (a little branch). Let all ingredients boil for 15 minutes, then, you can add the rice. Let
the rice cook for 15 minutes. At last, let it rest for 5 minutes and it will be ready to serve. You
should use a deep dish and decorate with a branch of any aromatic herb.
