Cauliflower Alfredo Pasta Sauce

Great way to incorporate veggies to your meals. This recipe is super creamy, tasty and
kid-friendly.

Ingredients
 1 pound (16 oz) pasta of your choice
 4 cups cauliflower florets
 4 cups chicken broth
 3 thin slices of ham chopped *optional or use grilled chicken or shrimp
 3 large garlic cloves, minced (use 4-5 if small)
 1½ tablespoons butter
 ⅓ cup shredded parmesan cheese
 ¼ cup of milk (about)
 Olive oil, salt and pepper to taste

Instructions
1. Bring broth to a boil in a medium size pan and cook the cauliflower florets for 5-8
minutes until tender. Remove from heat but do not drain.
2. In a skillet, sauté minced garlic with the butter for a few minutes until the garlic is
soft in low to medium heat. Do not brown the garlic or it will make the sauce
bitter. Remove from heat and set aside.
3. Transfer the cauliflower florets to a blender without the broth (keep about a cup of
broth for blending). Add the sauteed garlic and butter, salt, pepper, shredded
parmesan cheese, and add a little bit of olive oil and milk. Finally add about ¼ cup
of broth and start blending. As you blend you will see if the sauce needs more
broth or if you have reached the desired consistency. It depends on your taste if
you want it thicker. Same with the parmesan cheese, salt and pepper. Add more
or less depending on your taste.
4. Cook pasta according to the instructions, drain and mix with the sauce. Finally add
the chopped ham if you want and serve hot.
5. You can add a little more parmesan cheese to serve.

INGREDIENTS FOR BROCCOLI CAULIFLOWER NUGGETS


(makes 15-20 nuggets)

1 Egg
1 cup broccoli
1 cup cauliflower
1/4 cup bread crumbs
1/2 cup shredded cheddar cheese
Salt (optional)
Instructions:
Steam or boil broccoli and cauliflower (5-7 minutes), drain and chop. You can use a hand masher
or just chop the vegetables. I love the NUK Mash & Serve Bowlbecause I use it to mash and
serve the food in the bowl. It was great when my son was a baby. For toddlers mashing the
veggies is a great idea because it will have a softer texture and will be easier to eat.  It also
“hides” the veggies for those picky eaters who refuse to eat them.
In a bowl mix it with the rest of the ingredients and place them in baking sheet (on top of
parchment paper) or mold pan. You can just form little balls with your hands or use molds. I use
the Freshware 15-Cavity Mini Half Sphere Silicone Mold and love the size and shape of the
nuggets.  Perfect size for kids! It is also great for this recipe and will make exactly 15 nuggets!
Bake for about 15-20 minutes at 375. Remove from the oven and let the nuggets cool down for
about 15 minutes before removing from the molds. Broccoli Cauliflower Nuggets will come
right out of the mold! They are moist and delicious! Broccoli Cauliflower nuggets are also great
for babies who are ready for table foods.
