What to Eat & Juice When You Have Cancer


Lesson 1: Juice Fasting

Whatever treatments you choose on your cancer healing journey, juicing and what
you eat are very important for your healing. In fact, I've worked with a number of
people who have been healed simply by juicing, juice fasting and changing their
diet. Though that may not be the only thing needed for many people, it is an
important part of the journey.

Lesson 1 is all about juicing and juice fasting. Fresh veggie juices are your allies in
your fight against cancer. We are going to kick off this journey with a juice fast. Pick
the number of days that are right for you to fast. You could start with a 3-day juice
fast. You can juice fast more than 3 days if you like—3 to 7 days is what I would
recommend to get started. You may then want to juice fast one or two days each
week.

Remember, juicing can fit with a Ketogenic Diet, but the Keto diet I recommend will
need to be modified some. Though we are juicing non-starchy vegetables, the carbs
will be more than 5-10%. It is never a good idea to keep your veggie intake low.
Vegetables are your cancer fighters. Later in this lesson, I will give you information
on a number of superhero vegetables and the special nutrients they offer to fight
cancer.

The Game Plan


1. Drink 2 quarts of vegetable juice each day. This is a powerful and important step
in your healing. Read Michele Bracey's Story.
2. I recommend a juice fast the first week, if you can. Depending on your physical
needs, you may need to do a modified juice fast. You may add green smoothies
and/or a salad or good fats such as coconut oil as needed.
3. You may not be able to do this part of the plan if you are on a treatment that
cautions against having any raw foods during the treatment.

The Curative Power of Fasting


When we fast from solid foods, we give the body a chance to break down the
things that are causing dis-ease. Dead cells, cysts, tumors, and pockets of toxins
can all get attention. When we’re not eating food throughout the day, the body

can focus on healing, restoration and regeneration. Our bodies are made to
heal themselves, but we must provide the right environment for that to happen.

When we free up our digestive system from a lot of its work, the body can focus
on other activities like cleansing and repair. It can work on such things as dissolving
calcium deposits in the joints, calcifications in the breast, and releasing toxins stored
in the liver, kidneys, muscles, and fat cells. It can repair scar tissue, and work on
restoring or removing aging, injured, cancerous or infected cells. When we juice fast,
we provide enzymes in the raw juice, so the body does not need to manufacture as
many digestive enzymes and can focus more attention on other areas of need.

Fasting can even alleviate some major issues. When I was very sick with chronic
fatigue syndrome and fibromyalgia, I started my healing journey with a five-day juice
fast. On day five my body expelled a tumor the size of a golf ball with blue blood
vessels attached. I was totally amazed that a juice fast could produce that kind of
result. Years later when I was working on my master’s thesis “Nutrition and Cancer,” I
found research indicating that glutathione, a tripeptide, and certain flavonoids—all
found in a variety of vegetables can cut off the blood supply to tumors. It looked like
that had happened with the tumor I expelled.

Research shows that when human blood vessel cells are stimulated, they begin
forming tubular structures—a process known as angiogenesis. These structures
develop into new capillaries, providing a blood supply to the tumor. However, when
plant flavones were added, like apigen and luteolin, tube formation was blocked and
tubes get cut off. That's what appeared to have happened to the tumor I expelled. It
looked like those blood vessels had been cut. These flavones are found in foods
such as citrus, celery, peppers, and throughout the plant kingdom. Similarly, "fisitin,"
which is found in strawberries and many other fruits and vegetables, also
significantly shrank the formation of new blood vessels.

A new surge of interest in fasting suggests that it might indeed help people with
cancer. It might also reduce the risk of developing cancer, guard against
diabetes and heart disease, help control asthma, and even stave off Parkinson’s
disease and dementia. “We know from animal models,” says Mark Mattson at
the National Institute on Aging, “that if we start an intermittent fasting diet at
what would be the equivalent of middle age in people, we can delay the onset
of Alzheimer’s and Parkinson’s.”

The Juice Fast Diet Menu Plan and Recipes


Here’s your juice fast menu plan. If you can’t juice fast all 3 to 7 days, you could
try the juice and smoothie fast for part of the days. This is an opportunity to give
your body a break from digesting all the food you normally eat so your body can go
after the cancer. When the body isn’t focused on digesting sold food, it can focus on
healing and repair. When you juice fast, you can rejuvenate your cells. That’s why
many people notice some wrinkles disappearing and their skin getting firmer. Talk
about encouraging! This is your opportunity to restore your body at the cellular
level. And it's also a chance to restore your soul. Many people say that during a fast
their brain fog lifts and their spirit and soul feel clearer.

Start Your Day


Drink 8 ounces of purified water to start your day. It will flush your liver and kidneys.
Make sure that you drink plenty of water throughout the day. You will need to drink
a minimum of 64 ounces of water per day.

Next Up
Drink a cup of hot water and lemon with a dash of cayenne. This will get your liver
moving in the morning. Also, lemon is thought to cleanse the digestive track and
liver.

The Importance of Water When You Fast


Water is a key to good health. We are made up of more water than anything else—
about 60-65 percent in the body and 75 percent in the brain. But when you fast,
water becomes even more important because it flushes out toxins and waste that
come pouring out of fat cells and other hiding places during a fast. To keep from
feeling ill and getting an abundance of detox symptoms, it’s imperative to tip your
glass at least eight times a day. Water keeps your organs happy and your
metabolism strong.

My Fasting Tips for YOU!


Back when I first started juice fasting, I was so determined to get well, I just went for
it. I didn’t care how I felt. I was committed to fasting. I'm sharing what I learned with
you.

1. You can do this, even though you may be unsure at the start.
2. When it got tough through the fast, I found out I could make it, one hour, one day
at a time. You can too.
3. I looked at fasting as a new discovery. I was very curious as to what I would
experience physically. You will discover some amazing things about your body as
you fast.

Getting Started
• Shop ahead; be ready to hit the go button on day one. If you don’t have the
supplies you need, you may give up and not ever start your fast.
• Check your shopping list; do you have ALL the ingredients written down that you
will need?
• Do you have a source for purified water?
• Plan to avoid stimulants. Fasting is the time to get rid of coffee, black tea, and
alcohol. Instead choose green tea and healing herbal teas.

• Exercise, but not rigorously. Heavy weight lifting and intense cardio are not for
times of fasting, with the exception of The Daniel Fast (vegan diet). When juice
fasting, you want exercise that is less strenuous such as walking, swimming,
stretching, Zumba, and light weights.
• Go light on the supplements. If you are accustomed to taking a lot of nutritional
supplements, this is a good time to stop taking a bunch of them and give your
system a rest, especially hard pills and capsules. Liquids and powders can be mixed
in juice or water; they are much easier on your digestive system.
• Set your mind to completing the fast. If you’re unsure or unclear as to whether or
not you think you can do this, you may give up early or part way through.
• Have a back-up plan for emergencies. If you can’t juice at certain times of day,
have a juice powder on hand like our Garden's Best Superfood Juice Powder or low
sodium V-8 juice.
• You may need to juice ahead. If you’re busy and can’t juice every day, you can
make a batch of juice when you have time and store juice in your fridge for up to 24
hours. You can also freeze it in individual jars. You can find small glass canning jars
at hardware stores. Don’t fill them up to the top, however, or they can burst when
they expand. Leave an inch or two at the top for expansion. Pull a jar out of the
freezer the night before and put it in the refrigerator. It should be thawed by
morning.
• If you get really weak, dizzy, or faint, you can add in a green smoothie.

• Note what you want to gain from the fast: Keep your list in sight. These are your
goals to work toward. What do you want to accomplish on a physical level?
Mental/emotional? Spiritual? Breakthrough?
• Not so fast. Prepare to fast from some of your busyness. Fasting is not a time for
life as usual in the fast lane. This fasting lane is a time for reflection, resting, and
relaxing a bit more. It’s a time to refrain from a lot of external stimulation such as TV,
reading that gets your heart racing, and movies that set you on edge.
• Renew your spirit and soul. This is a great time for meditation and reflection. Create
some space for change to happen.
• Let go of the negative. Fast from negative thinking and toxic emotions. When you
catch one of these “bad guys” sneaking into your soul (mind, will, or emotions), kick it
out.
• Tell yourself you can do this!! You are awesome for choosing to fast. I’m proud
of you for taking this wonderful, life enhancing step. Now, go and do your best.

Healing Teas
Lemon balm is a tea for lifting your spirits. You might need that when you’re
fasting ‘It’s good for the cloudy day blahs’, which you could get even when the
sun is shining.

Bilberry (Huckleberry) is great for helping to balance blood sugar.


Sage Tea - Look up sage tea and you’ll find many medicinal uses for this tea. One of
them is how it helps your body utilize insulin. Studies show that sage can boost
insulin activity in diabetics. This is a very good thing in fighting cancer.

Juice Tips
Don't juice fruit except for lemon, lime and fresh cranberries. It is important to
keep your sugar low because cancer cells feed on sugar. Fruit juice is minus
the fiber so you don't want fruit juice in your diet except for the lowest sugar
fruit.
Dilute carrot and beet juice with green juices such as cucumber, zucchini and
celery. It's best not to juice carrot and beet together. They are high sugar
vegetables.
Make sure you purchase organic produce. You don't want cancer-causing
pesticide residues on your produce. Washing helps remove only the external
sprays. What's internal in the plants can't be removed.

zip to change things up a bit for your juice fast days.

Basic Shopping List for Juice Produce

This is a basic list. Now go through the recipes and pick out ones you'd like to try.
Then add to your shopping list accordingly. Be sure to buy organic produce.

• 10 cucumbers • 5-10# bag carrots


• 2 stalks of celery • 1 bunch kale
• 10 lemons • 1 large ginger root
• 5 limes • Several pieces fresh turmeric

Immune Booster Shot


Yield: 1 serving
• 1-inch chunk of ginger
• 1-inch chunk of turmeric
• Juice of 1 lemon
• A drop or two of organic liquid stevia (I suggest Sweet Leaf brand)

Juice ginger and turmeric. Mix with juice of lemon and sweetener. Serve
immediately.

Get Your Ginger Greens On


One study found that people who took 2 grams of ginger a day saw improvement in

• 1/2 large fennel with fonds • 3 leaves kale


• 1-inch piece ginger root • 1/2 cucumber, peeled if not
• 1 large broccoli stem organic
• 1 rib celery

Want to kick your metabolism into high gear? Add more chili peppers. They contain
capsaicin, which is a chemical compound that can rev up your metabolism.

• 6 kale leaves • 1/4 jalapeno


• 1 cucumber • 1 lime or lemon, peeled

Juice all ingredients, pour over ice, stir and enjoy!


Serves 1

Liver Detox Juice


One of arugula's unique cleansing properties is to counteract the destructive effects
of heavy metals, particularly in the liver. A member of the cruciferous vegetable
family, arugula is rich in detoxifying antioxidants.

• 1 cucumber • Juice of 1 lime


• 1 handful arugula • 1-inch chunk ginger root
• 1/4 cup mint

Juice all ingredients. Stir and enjoy!

Happy Mood Morning


Fennel is a traditional remedy for elevating the mood.

• 1/2 fennel bulb with fonds and • 1 cucumber


flowers • 1/2 lemon

Juice all ingredients, stir, and enjoy!


Serves 1

Blood Sugar–Balancing Cocktail

• 2 romaine lettuce leaves • 2 brussels sprouts


• 1 cucumber, peeled • 1/2 lemon, peeled
• 1 celery rib • 1 tomato (omit if you are
• 1 carrot sensitive to the nightshades*)
• 8–10 string beans

Bunch up romaine lettuce leaves. Cut produce to fit your juicer’s feed tube. Tuck the
romaine lettuce in the feed tube and push through with the cucumber. Juice
remaining ingredients,finishing with some tomato. Enjoy!

Curb Your Carb Cravings


Jerusalem artichoke juice combined with carrot is a traditional remedy for satisfying
cravings for sweets and junk food. They key is to sip it slowly when you get a
craving for high-fat or high-carb foods.

• 1 small Jerusalem • 1/2 cucumber


artichoke,scrubbed well • 1/2 lemon
• 3-4 carrots, scrubbed well, tops
removed, ends trimmed

Cut produce to fit your juicer’s feed tube. Juice ingredients and stir.
Serves 1

Cilantro Heavy Metal Detox Cocktail


Cilantro has been shown in studies to help the body detox heavy metals such as
mercury, lead, and aluminum. (This is not the right recipe for you if you are sensitive
to the nightshades.)

• 2 tomatoes, cut in chunks • 1/4 tsp. ground cumin


• 1 cup fresh carrot juice (5–7 carrots) • 1/4 small jalapeño, chopped (more if
• 1 lemon, juiced, peeled, if putting it you like it hot)
through a juicer • 3 radishes
• 1/4 cup cilantro, rinsed, chopped • Pinch of sea salt

Place the tomato chunks in a freezer bag and freeze until solid. Pour the carrot and
lemon juices into blender, adding frozen tomato chunks, cilantro, salt, cumin,
jalapeño, and radishes. Blend on high speed until smooth, but slushy; Serve
immediately. Serves 2

Wild Green Detox Juice


One of the best herbs to use for a cleanse, dandelion acts as a cleansing agent on
both the liver and the kidneys. It helps to purify the blood and flush out uric acid
crystals that accumulate from eating a diet too rich in animal proteins and other
acid-producing foods; it restores the alkalinity of the blood.

• 1 lemon, peeling if not organic


• 1 cucumber, peeled if not organic
• 1 celery rib
• 1 handful wild greens such as dandelion, nettles, plantain, or sorrel

Cut all ingredients to fit your juicer’s feed tube, then juice.
Stir the juice and enjoy. Serves 1.

Wild Green Energy Cocktail

• 2 carrots, green tops removed • Handful of wild greens such as


• 1 cucumber, peeled if not dandelion greens or stinging
organic nettles (or substitute arugula)
• 8 asparagus stems • 1 lemon, peeled if not organic

Cut produce to fit your juicer’s feed tube. Juice all ingredients
and stir. Pour into a glass and enjoy!

Carrot Coconut Delight


To get the full benefit of carotenoids from carrots, it’s best to combine it with a little
fat. Adding coconut milk is a perfect combination and so delicious. Also, the coconut
milk helps dilute the sugar from carrots.

• 5 large carrots, tops removed • 1/2 teaspoon cinnamon


• 1/2 cup full fat coconut milk • 1/4 teaspoon nutmeg

Juice carrots and pour the juice in a glass. Stir in the coconut milk, cinnamon, and
nutmeg. Make sure you use coconut milk and not coconut water to give the juice a
creamy texture.

Serves 1

WHAT ARE THE NIGHTSHADES?


Tomatoes, peppers, potatoes, and eggplant along with tobacco are all members of
the the nightshade family. If you have joint pain—and tomatoes, peppers, potatoes,
and/or eggplant are a regular part of your diet— eliminate all nightshades from your
diet for at least two weeks and see if you notice any difference in your symptoms. If
you see an improvement, you might be among those who are sensitive to solanine.

(Researchers in the UK and Denmark reduced cancerous tumors by 1/3 in mice
and rats with lab induced cancers.)

Celery—another superhero:
As it turns out the humble little celery stick has a lot more to offer than we thought.

• Has been found effective in killing ovarian, pancreatic, prostate, breast, liver and
lung cancer cells.
• It’s flavonoids apigenin and luteolin combat free radicals
• Apigenin was found to inhibit the initiation, progression and metastasis of tumors.
• Apigenin has been found to inhibit angiogenesis, thus depriving tumors of blood,
oxygen and nutrients they need to survive.
• Apigenin interferes with molecular signaling, decreasing the production of
chemicals needed by cancer cells.
• Of significance are some of the non-starchy polysaccharides in celery which
seem to have the most anti-inflammatory benefits.
• Offers the antioxidant benefits of vitamin C, flavonoids, dihydrostilbenoids like
lunularin as well as furanocoumarins like bergapten and psoralen.

Kale: the king of leafy greens


• This mighty green cruciferous vegetable has been shown to lower your risk of
getting cancer.
• It’s Isothiocyanates that have been identified as having the most benefit.
• Offers impressive support for detoxification.

Watercress: the #1 healthiest vegetable

Wheatgrass Juice's Healing Power

Wheat grass juice has been used to neutralize toxins and carcinogens in the body,
reduce high blood pressure, and aid in the treatment and prevention of cancer and
AIDS. Wheat grass juice may decrease myelotoxicity in breast cancer patients
undergoing chemotherapy. This claim is supported by a 2007 study published in
Nutrition and Cancer involving 60 breast cancer patients undergoing chemotherapy
treatments. Researchers found that patients receiving a daily serving of wheatgrass
juice during the first three cycles of chemotherapy experienced a significant
reduction in myelotoxicity. These patients also had a reduced need for drugs to help
boost their white blood cell production.

About Juicers and Blenders


There are so many different juicers on the market. How do I know which one is best?
I’ve received hundreds of emails asking which juicer is best— cold pressed,
masticating or centrifugal. I consider a juicer a “must have” for a healthy kitchen
precisely because it separates juice from the fiber. Then there’s nothing to slow
down that veggie juice from getting into your system. It goes right to work
rejuvenating and healing your body. A juicer separates the fiber from the juice,
which is what you want in this case. There are two categories of juicers: cold
pressed (masticating) and centrifuge.

Cold Press (a.k.a. Masticating) Juicers


The cold press or masticating juicers press or crush produce to extract the juice. I
know of one study showing that this type of juicer preserves a few more nutrients
than the centrifuge juicers. Most masticating juicers will make wheatgrass juice and
they juice greens better than a centrifuge juice. They don’t produce as much heat
when processing and don’t oxidize the juice as much; therefore, they persevere the
vitamins and enzymes better. The drawbacks for the “slow juicers” as they are also
called are around time. Few of them have a wide mouth, but even the slow press
juicers that do, must have everything cut in small pieces, unlike the centrifuge
juicers which take most items whole. They are also slower than the centrifuge type.
If time is your main issue and you don’t have a lot of that precious commodity, then
go for the centrifuge.

Centrifuge Juicers
Most centrifuge juicers have a wide mouth. They spin and separate juice from fiber
by bursting open cells. They are faster to use because you don’t have to cut most of
your produce up and they are speedier at the juicing process. I have that type and
am very happy because I can juice and wash the juicer in about five minutes rather
than spending about 20 minutes preparing juice. The drawback is the fast spinning

blade which can generate heal and also oxidize the juice thus destroying some of
the vitamins and enzymes.

How Do I Choose?
If fast is most important, even though you may lose a few more nutrients, this will
still be the healthiest thing on earth you could drink. If time is of essence to you, then
you might get the fanciest cold press juicer on the market and rarely or
inconsistently use it because it takes too much time. So what’s the best juicer? It’s
the one you’ll use everyday.

Here are a few tips for purchasing a juicer:


Make sure your juicer is proficient at extracting the juice. Machines with too high
rpms can leave juice in the pulp. If you can squeeze juice out of the pulp, I wouldn’t
recommend that machine. Over the years, I have tried various juicers that are not
capable of releasing all the juice and producing dry pulp. An inefficient juicer can be
one reason why people end up spending a lot of money on produce. So you may
save money in the long run by spending more up front on a good juicer.

Choose a strong machine that can juice all types of produce including tough, hard
items like broccoli stems, root vegetables like carrots and beets, as well as delicate
foods like leafy greens and herbs. The masticating juicer will be the ticket if you do a
lot of leafy greens, delicate herbs or wheatgrass. Because they operate with a single
or a double auger, they work well for pressing juice and processing leafy greens and
herbs.

A large feed tube is a nice feature. Then you don’t have to cut everything up in small
pieces. A juicer with a large feed tube will save you time. Almost all the centrifugal
juicers I’ve seen have a large opening for produce.

Make sure the machine ejects the pulp into a separate receptacle. Some of the
older machines collect the pulp on the inside of the juice basket and the user must
stop frequently to remove it. There are very few models like this anymore. But if
you’re at a garage sale or thrift store, which is about the only place you’ll find one of
them today, I’d recommend you pass it by. Although I have also seen one or two
very cheap models that keep the pulp inside at discount stores. Don’t get one of
them.

Easy cleaning tip: Line the pulp receptacle with a plastic produce bag—one of the
free baggies from the grocery store. By doing this, you can skip cleaning the
container and simply plop the pulp into the trash, compost or use it in cooking.
Simplify: Cleaning and reassembling, should be simple. You don’t want any extra
work to keep you from daily juicing. If you buy a juicer with too many parts to clean,
or the parts are complicated to wash, you probably won’t juice every day. Also,
make sure the parts are dishwasher safe. My routine is to rinse the juicer after use
and leave it to air dry. The blade basket is easy to clean especially if you use the sink
spray and a dish brush. It takes me only about a minute to clean all three parts (plus
the plunger) of my juicer. Then occasionally, I run the parts through the dishwasher
to brighten everything up. Don’t put the plunger in the dishwasher though. I did once
and it swelled up with water to where I couldn’t use it.

What About the Vita Mix and NutriBullet Blender Types?

I’m continually asked about the difference between juicers and blenders. Quite a
few people think the blender they purchased is a juicer. So what about the Magic
Bullet? Nutri-Bullet? Blend Tec? VitaMix? These are all blenders that keep
everything in the container. They make smoothies; they won’t make juicer. I love my
VitaMix. I use it nearly everyday to make my morning green smoothie. It’s a
wonderful addition to a healthy kitchen. I first make uice, pour that in my VitaMix,

add an avocado and blend until creamy. I put chopped almonds on top and that’s
my breakfast-- with a glass of juice.

Let’s start with an explanation of the difference between a juicer and a blender.
Many people are told to get one of the blender types because they should keep all
the fiber. But I need to explain why this isn’t very appetizing for many recipes made
with vegetables. When you juice, you separate out the insoluble fiber or pulp from
the juice, however, a blender simply blends up everything, leaving the insoluble
fiber in the drink. I experimented with this by blending carrots, beet, parsley and
celery. The taste reminded me of fiber-thick mush. Lots of people say they end up
straining their blended concoctions to get a palatable juice. But that takes a LOT of
time.

If you want the health benefits of juicing without giving up on taste and texture, you
need a juicer not a blender. When you blend up more fruit with leafy greens, you will
get a tasty smoothie. But I’ve had many people say that to make it palatable, they
had to use too much fruit and ended up with too much sugar. You could try what I
do and juice some of the veggies first and then pour some in a blender and add an
avocado. For green smoothies with berries and other low sugar fruit, see chapter 8. I
have a number of smoothie recipes where you don’t have to juice anything first. For
you morning smoothies, you can use your Vita Mix, Nutri Bullet or other fast blender.
