Getting to know me:


Hi my name is Sheldon Beckles I am 14 years old. I attend Speyside Secondary
School, I am currently in class 4a2. I enjoy playing football and watching anime
in my free time. I love food and love to cook it. My dream is to become a
professional mechanical engineer or a chef.

Expectation of subject:
My expectation for this subject is to learn as much as i can and to pass the
subject with a grade 1.

Knife Skills

Reflection 1: Today we learnt knife skills.We practiced on a carrot,we learned


the different technique when holding the knife like: the bridge hold and the claw
hold.We also learned different chopping technique like the Julienne,cube and
dice
Macaroni Pie

Reflection 2:

Today my classmates were entrusted to bring food items which consisted of


chicken feet,provisions,flour,corn meal,fish etc to make chicken feet/fish
soup.We first started by cleaning the counters, then we took out our utensils.
Then we started by washing the vegetables and provision.Then we peeled them,
then we lit the stove with a big pot filled with water and split peas, then cutted
the chicken feet,then waited for the peas to boil,in the meantime we started with
the preparation to make the dumplings.First we got a medium sized boil. Then
we washed it then wiped it out. Then we proceeded to pour in
flour,cornmeal,salt,sugar and a little bit of water.Then we mixed it all up to
form a dough, Then we went to check up on the peas and it was finished.The we
got a large pot and add water in it, then put it on the stove,then we waited for
the water to boil.We then started to roll the dough in to a long rope, then
proceeded to cut them into small section. Now the water is finished boiling we
then start to pour the vegetables,provisions,the peas and then the chicken feet
into the pot.Then we waited for the last second to put in the fish,we also added
seasonings to the soup. Then we waited for the soup to finish, then we equally
distributed the soup for every one to taste the finished product.

Resolution 2: Today we separated in a group to make a food dish using


eggs,milk and cheese.My group chose to make the dish macaroni pie.We started
my putting a pop of water to boil on the lit stove,then we added some salt.Then
we proceeded to chop up some garlic and onion,then we blended the up using
the food processor.Then we were ready to put in the macaroni.After putting in
the macaroni we covered the pot,in the meanwhile one of my colleagues stated
to grees the making tray with butter.Then we strained out the macaroni,then we
made the sauce for the macaroni by putting butterfly milk,flour and cheese in a
pot.Then we mixed the sauce with the macaroni and then put the mixture into
the greased tray.Then we put it into the oven to bake,then we all tasted the
finished product.

Reflection 3: Today we made dasheen bush soup.

Order of work

Time Activity

9:00-915am Line swiss roll pan with greaseproof paper; brush paper lightly with melted fat.
Sieve flour three times.

9:15:9:30am Whisk the eggs and sugar together with vanilla and orange peel until pale and fluffy.
Fold in the flour a little at a time until all the flour is incorporated.then mix the cherry’s with flour and
add the cherry’s to the mixture.

9:30-9:45 am Spread the mixture evenly in the lined pan.


Bake in a preheated oven at 400 F for 12-15 minutes until spongy.Then mix the cherry’s with flour

9:45-10:00 am Dredge a sheet of paper or cloth with icing sugar.


Turn out immediately on cloth or paper; peel off paper from roll.
10:00-10:15 am Trim the crisp edges off the roll; spread it with warm jam (leave ¾ edge off three sides).
Roll the sponge lengthwise and finally wrap in a paper towel.
Hold roll in shape for a few seconds, then remove paper.

10:15:10:30 am Then serve the dish

DESSERT

Today we made Egg Custard.This whole process was fun.The finished product tasted
amazing,this process was also easy. The method of cooking was by using a double boiler. The
pan at the top cannot touch the water on the inside.
