NARRATIVE REPORT: PANDESAL BAKING

I. INTRODUCTION:
For our Fundamentals of Baking and Pastry Arts course requirement, we
were tasked with searching, providing and learning the recipe and procedure of
the popular Filipino bread roll, pandesal. The objective of this practicum was for
us to be familiarized with the ingredients, techniques and process of baking
pandesal. As TLE Major students, this practicum is a great opportunity for us to
learn the art of baking.

II. PREPARATION
To begin our activity, we provided a copy of the recipe for the list of
ingredients and the step by step process of pandesal baking. We were gathered
at the Kitchen Laboratory of Philippine Normal University South Luzon to conduct
this activity. We made sure that our ingredients and personal equipment were
complete before starting.

III. INGREDIENTS
The ingredients of pandesal that we used were fairly simple, consisting of 1
cup all-purpose flour, 1 cups bread flour, 1/4 cup white sugar, 2.5 tbsp butter
melted, 1/2 tsp baking powder, 5/8 cup fresh milk warm, 1/2 pouch rapid rise
yeast, 1/2 tsp salt, 1/2 cup bread crumbs, 1-piece raw egg, and 1/2 tbsp cooking
oil. We paid careful attention to the precise measurements and ratios to ensure
the best results.

IV. PROCESS
We started by combining the yeast, sugar, and warm milk and stirring until the yeast
and sugar are fully dissolved in a mixing bowl. After combining the said ingredients. We
set it aside to mix the dry ingredients. In mixing the dry ingredients, we started by
combining the flour, sugar, salt, and baking powder. We sifted the flour to achieve a
lighter and fluffier texture. After that, we added the egg, butter, cooking oil, and yeast-
sugar-milk mixture in the mixing bowl with the dry ingredients then we mix again until a
dough is formed. We also used our clean hands to effectively mix the ingredients. When
the dough is finally formed, we rested it for 30 minutes. We cleaned our area while
waiting to prepare for the next step. After 30 minutes, we started to mold the dough until
the shape becomes round. Then, we rolled the sliced dough over the breadcrumbs and
placed it in a sheet pan. We leave it again for 10 minutes to rise. After 10 minutes, we
put the sheet pan with dough in the preheated oven and baked it for 15 minutes

V. CONCLUSION:
Baking pandesal is an enjoyable experience for me because I was able to
gain practical skills in baking techniques. I really wanted to learn how to bake
since I was a child and I am glad that this course gave me a chance and
opportunity to practice my skills in baking. This experience not only enhanced our
baking skills but also enriched our understanding of Filipino culture and cuisine. I
am looking forward to more baking sessions during this course.
