CHINESE CHICKEN SALAD

INGREDIENTS

1 teaspoon olive oil (40 cal.)


½ chicken breast fillet (85 cal.)
½ tsp Chinese five-spice (3 cal.)
¼ romaine lettuce, shredded (25 cal.)
100g mixed crunchy salad vegetables (such as carrots, red pepper, sugar
snap peas, green beans, baby sweetcorn) (35 cal.)
½ tablespoon sweet chilli sauce (12 cal.)
1 teaspoon vinegar -
½ tablespoon soy sauce (4 cal.)
½ teaspoon toasted sesame seeds (24 cal.)
1 spring onion, shredded (5 cal.)
Salt, pepper -

COOKING INSTRUCTIONS

1. Heat the oil in a frying pan. Season the chicken with salt and pepper and
a sprinkle of the chinese five-spice. Fry for 3-4 minutes on each side until
golden and cooked through. Set aside to rest and cool a little, then slice
or shred.
2. Toss the chicken with the lettuce and mixed veg in a bowl.
3. Using a fork, mix together the sweet chilli sauce, remaining chinese five-
spice, vinegar and soy sauce, then pour over the salad and toss well.
Scatter with the sesame seeds and spring onion before serving.
