Preparation and bottling of liquor

The origin of “liquor” was Latin word liquere, meaning to be fluid. Liquor

is an alcoholic beverage made from a distilled spirit with different flavor.

This flavor made from fruit, herbs, species, flower, and from aromatic or

artificial flavoring agents. Example of distilled alcoholic beverage include

vodka, gin, ouzo, brandy etc. the plant consists of two rooms known as

preparation and bottling.

Preparation is a process in which two or more material is mixed properly

to produce liquor. In room there is syrup preparation, caramel

preparation, dilution of alcohol, mixing of raw materials and filtering of

liquor. Main raw materials for preparation of liquor are

Essence- is a flavor or substance which gives special taste and odor to

the liquor.

Syrup preparation- use citric acid and sugar.Soft water is used to

dissolve the sugar.


The amount of sugar and water add to the tanker is depend of the type

of liquor. Citric acid is used for preservation of syrup.

Caramel preparation- used for color liquor. First melt the sugar with

stove at 120◦C. then add water and boil 3 up to 4hr until the desired

color is achieved black or brown.The color is check with colorimeter.

This is used for lemon liquor, aperitif, cognac, super mint, zebib. The mixing tank

has a mixer inside it. After the mixing tank has cleaned, about

96.2%alcohol of ethanol is pour to tank. Then add some amount of water

in order to dilute up to 40% mix for 45 minute then add flavor, and color

each substance takes 45 minute for mixing but there are three products,

which do not need the addition of color. These products are dry gin,

ouzo and double ouzo. At the end add the prepared syrup wait until its

well mixed with the materials over all takes 4 hour. The prepared liquor

will be filtered and stored in liquor holding tank. The amount of sugar,

soft water, and alcohol are different for different liquor. The type of flavor

and color are also different. Then this liquor transfer to bottling room.

Bottling section
Bottling is final unit operation in balezaf alcohol and liquor factory. In this

section there are 4 machines working properly. These are Washer, filler,

labeler and packing machine. The aim of bottles cleaning is not only to

remove dirt also to be sterilized. The bottle washer washes in five stages by caustic,

intermediate water, warm water, cold water and fresh water washing stages.The labels on

the bottle are also removed in the washer. After washing the bottles are

dried by using blower and bottles are sent to filler machine by belt

conveyer.

Filling and capping- The liquor produced in blending section filled, sealed and packed

in this section. In Balezaf Alcohol Industry the existing bottling plant has the capacity to
produce 6000 bottles per hour and produces more than 12 kinds of liquors with different
alcoholic content, color and flavor.

The liquor that comes from blending house is store in tank and fills the

bottles with liquor and closed up by aluminum closures. The filled bottles

are inspected manually with human eye based on light inspection

method before it is labeled. Then the label is stamp on the bottle.

Labeling- The label is consists of name of factory, logo of the factory,

type of liquor,address of the factory, volume of liquor and quality certified

number. Label with glue automatically. Then bottle with liquor is collect in

to crate, one crate contain 15 bottles and store in product storage by

man power.
