Region 10, usually called Northern Mindanao, is composed of 5 provinces:
Bukidnon, Camiguin, Lanao del Norte, Misamis Occidental and Misamis Oriental. It is comprised of 9 cities: Cagayan de Oro, El Salvador, Gingoog, Malaybalay, Valencia, Oroquieta, Ozamiz, Tangub and Iligan. The regional center is the City of Cagayan de Oro.
Binaki, a known delicacy in Northern Mindanao,
was originally a homemade dessert in Bukidnon. It is a steamed cake made of grated young corn with powdered milk, baking powder, and sugar mixed with water. Naming the delicacy "binaki" is somewhat weird since the term sounds like baki, which is the vernacular for frog, but it has nothing to do with frogs. The assumption to why this delicacy is called like that is maybe because the corn cake when wrapped with corn husk resembles frog legs.
Dodol is the most popular rice-based delicacy in
Lanao, particularly in the city of Baloi and Marawi, the places which have been touted as the "Dodol Country". It is often served in the special occasions of Maranao such as weddings, fiestas, birtday, etc. It is made from sticky rice flour, coconut milk, and sugar. Others add durian to make it more delicious.
Pastel de Camiguín, or simply pastel, is
a Filipino soft bun with yema (custard) filling originating from the province of Camiguin. The name is derived from Spanish pastel ("cake"). Pastel is an heirloom recipe originally conceived by members of the Agrepina Dagondon Gultiano family of Camiguin. It is primarily produced by the family's special occasions and gatherings. In addition to the original yema filling, pastel also feature other fillings, including ube, mocha, macapuno, cheese, chocolate, durian,jackfruit, and mango, among others. Pastel is regarded as a pasalubong (regional specialty gifts) of Camiguin Island and nearby Cagayan de Oro City.
