Banana Berry Seeded Overnight Oats

INGREDIENTS
1 large ripe banana
1 cup old-fashioned rolled oats
2 Tbsp chia seeds
2 Tbsp hemp seeds
1 tsp vanilla extract
⅛ tsp salt
1 ¼ cups unsweetened soy
milk (or preferred nondairy milk)
⅓ cup raspberries
⅓ cup blueberries
⅓ cup blackberries
Unsweetened coconut flakes, raisins,
sunflower seeds, sliced strawberries, pure
maple syrup, for serving (optional)

INSTRUCTIONS
In a medium bowl, mash the banana well
with a fork. Add the rolled oats, chia seeds,
hemp seeds, vanilla, salt, soy milk, raspberries,
blueberries and blackberries. Stir gently until
ingredients are completely combined. Cover
(or transfer mixture to a lidded food storage
container) and refrigerate overnight, or a
minimum of 6 hours.

Once ready to serve, stir again to combine.


If the mixture is too thick, add an additional
splash of non-dairy milk and stir again. Serve
with some or all of the suggested toppings,
if desired.
NOTES
You can mix and match the fruit used, such as strawberries or pomegranate arils.
