The premise that we have choose is night market at Seksyen 17, Shah Alam. We have
conducted some investigation at this one stall that sells a variety of friend chicken likes hot
and cheesy fried chicken. After doing an observation about this stall, we have noticed that
one of the workers are wearing a bracelet. Wearing a bracelet is one of the offenses in food
preparation. There is a lot of dirt and germs that collect in the gasps of the accessories and
this act can cause food contamination to occur. Bracelet that the workers are wearing tend to
collect pathogens and bacteria. Maybe the worker always touches the bracelet constantly
whether we notice or not. Perhaps he is fussing with it, adjusting it to appear good, or simply
touching it to put it on or take it off. Throughout the day, we don’t know that the worker has
touch something likes phones, car or most likely to contact with the bracelet. So, there is a lot
of bacteria hide in the bracelet. Cross-contamination between accessories and the foods
being prepared can result in foodborne illness. If you handle them while preparing food, you
run the risk of contaminating it with pathogens or having the jewellery come off. Wearing a
bracelet or jewellery makes the handwashing practice less effective. When we are wearing
bracelet, its cover the part of our skin. So, when we are washing our hand, the area covered
by the bracelet cannot be washed properly. Additionally, even after rinsing, the hand soap
may still be within. This act can encourage the bacterial growth and finally cross-
contamination will occur. The workers wearing a bracelet when sells the fried chicken and
never took off the accessories. Food handlers are generally not allowed to wear a jewellery
worn on their hands. What we are wearing reflected on our food safety in a food
establishment. Accessories likes jewellery or bracelet is considered as a physical hazard that
can cause choking, cuts, injury, or other foodborne illness when ingested. For example, if the
food handlers wearing a jewellery and suddenly, she gets a little injury which caused a slight
wound. That wound will get effected and can enter the food which can caused food
contamination. Furthermore, jewellery can constitute a choking hazard when it falls into
food, particularly earrings and rings with embedded stones. It can harm the buyer.
Another action that may leads to contamination of food that we have observed that all
the workers did not wearing a proper attire to prevent contamination such as gloves, apron,
and head cover. We have noticed that the workers did not practice a good hygiene. Even a
simple thing likes wearing an apron, they did not follow as requested when you want to do a
food business. A proper attire like apron is very compulsory and legally required by the
health code to prevent food contamination. Wearing an apron can protect the food from
coming into contact with food and prevent hair, fibres and the contents of pockets getting into
food. Aprons aid in preventing bacteria and grime from getting onto work clothes and are
readily removed for washing or, if it is disposable, discarded. Protection is needed when you
are handling food business. It can keep from our clothes getting expose by the spills and
stain. Apron also act as a hygienic purpose by covering the front of the body. To shield the
inner clothing from dust, filth, spills, and debris when preparing food, serving guests,
cleaning up, or engaging in creative activities. Your garments are shielded from harm with
apron protection. - The proper use of aprons can reduce cross-contamination between the
daily clothing worn by food handlers and the food being prepared or handled.

Other than that, the fried chicken workers also did not wear a glove. The worker just
using an equipment likes food clamp to put the fried chicken into the plastics. Since they did
not wear hand gloves, they are touching dirty equipment and contaminated stuff may pick up
bacteria. The bacteria from the dirty equipment can transfer to the food. Handling food with
bare hands has a higher risk of contaminating food. Hands are parts of the body that often
come into contact with food. By using glove, it can create a safety barrier between food and

hands. Wearing gloves are more hygienic than bare-hands when touching ready-to-eat foods. 
As we know, throughout the day we always use hands to do various things such as to do
work, eat, hold our nose or mouth. This will cause harmful bacteria to easily attack us. The
bacteria from our hands can easily contact with the food. Bacteria likes salmonella and E. coli
can easily attack us and finally can cause food poisoning to the buyer. These bacteria we
cannot see it by naked eyes but may be present on hands if the workers do not wear a glove.
Wearing a glove also keeps the food clean and clear of grease, grime, and other impurities.
Additionally, it stops oils and flavors from transferring from your hands to the food. Because
of that, wear a glove is very necessary for food handling.
Other mistake that the worker does is one of them did not wearing a head cover. Head
cover is must when handling food. If they did not wear head cover, the hair may fall into
food. The customer may accidentally eat the hair that has fallen into the food. This action can
cause food-contamination because hair contain a lot of bacteria. Hair can be a source of food
poisoning bacteria and contamination. microbiological contamination because
Staphylococcus Aureus, a food poisoning agent, is frequently found on the human scalp. If
the food worker did not wear head cover, they may likely to touch their hair constantly. The
bacteria can spread widely into the food especially if the food is unwrapped. By wearing a
head cover, it can prevent foreign object likes hair failing into food and can make sure the
food that they prepare free from the bacteria. All food handlers must wear enough hair
restrictions that completely conceal all visible body hair.

Furthermore, this fried chicken stall also did not cover the food after finishing frying
the chicken. The fried chicken was left exposed too long to the environment without covering
it with a food cover. This act will cause destructive insects such as flies to land on the food
and can cause food poisoning to the customers. Food that is covered is shielded from
contaminants including dangerous microorganisms, foreign objects, and chemicals. Food that
exposed to the air can easily contaminated as bacteria needs oxygen to growth. The food can
spoil quicker if they exposed it to the environment for a long time. Proper handling of foods
can be the only defense against contamination of food.
