1.2.4 Methodology Summary

In order to create the data for all the reports in this series and ensure its robustness, a comprehensive
and empirically robust research methodology has been adopted. This combines both a large-scale
program of industry research with the results of extensive primary industry interviewing and calling.
Furthermore, all definitions are standardized across products and countries to ensure comparability.

The two main research methods, secondary research and primary research (the program of interviewing
industry contacts), are brought together and because both sets of research processes have been
designed in conjunction with each other they can be combined and consolidated into the final, integrated
data sets.

The secondary research process involves covering publicly available sources, trade associations,
specialist databases, company annual reports, and industry publications. While primary research involves
a major program of interviewing leading industry executives for each category covered in each country –
all with local country experts; typically brand, product and marketing managers for major brands within
each country. These processes help analysts in capturing both qualitative and quantitative information
about the market.

The final stage of the process is the triangulation of inputs obtained from all the research methods with
the analyst’s own understanding of the market in order to finalize the data. Once the data is finalized, it
goes through various top level quality checks prior to publishing.

3. Latest Events: Global Ice Cream Industry

3.1 Ohio-based artisan ice cream maker reopens shops after listeria
scare
Jeni's Splendid Ice Creams, an Ohio-based artisan ice cream maker, has reopened its scoop shops,
which were closed following a listeria scare.

Jeni's has several outlets in Nashville, 12South and the Nashville Farmers' Market, and plans to open
outlets in Germantown and Hillsboro Village.

Last month, Jeni's stopped manufacturing ice cream and closed its stores after listeria was found in a
sample pint of ice cream that was randomly collected by the Nebraska Department of Agriculture.

Following this, the Ohio firm recalled all of its products and destroyed over 265 tons of ice cream, which
cost the company over $2.5m.

The company also claimed that it plans to invest over $200,000 to remodel its production facility.

3.2 Blue Bell closes distribution centers, cuts 1,450 jobs

As an aftermath of the Listeria scare which has reportedly killed three people in Kansas and infected ten
people in four states, the wide-spread product recall and suspending its entire operation, Blue Bell
creameries is closing distribution centers and laying off workers for the first time in its 108-year history.

The company is ending operations at distribution centers in ten states: Phoenix and Tucson (Arizona),
Denver Colorado), Indianapolis (Indiana), Kansas City and Wichita (Kansas), Louisville (Kentucky),
Albuquerque (New Mexico), Las Vegas (Nevada), Raleigh and Charlotte (North Carolina), Columbia
(South Carolina) and Richmond (Virginia).

A company spokesperson Van Dorf said: "When we return to market we will have limited production and
distribution and had to make the difficult decision to close some of our facilities."

Blue Bell is privately held and has been run by the same family for 108 years. It has shut down all four of
its plants for cleaning and improvements, and that process is taking longer than expected.

The company recently announced that it is axing 750 full-time employees and another 700 part-timers, or
about 37% of its 3,900 workforce. The remaining employees will have to take pay cuts. Around 1,400
employees will be furloughed with sharply reduced pay.

Blue Bell has not said when it expects to begin making ice cream again.

In a statement, CEO and president Paul Kruse said: "The agonizing decision to lay off hundreds of our
great workers and reduce hours and pay for others was the most difficult one I have had to make in my
time as Blue Bell's CEO and President.

"At Blue Bell, our employees are part of our family, and we did everything we could to keep people on our
payroll for as long as possible. At the same time, we have an obligation to do what is necessary to bring
Blue Bell back and ensure its viability in the future.

"This is a sad day for all of us at Blue Bell, and for me personally."

3.3 Listeria-tainted Blue Bell ice cream being hawked online

In spite of the recent recall of all Blue Bell ice cream and related products due to the potential risk of
Listeria contamination, some a few are selling their Blue Bell reserves via online ads in a bid to make
quick money.

Blue Bell ice cream recently recalled their entire line of products due to a Listeria scare that resulted in
three deaths and several hospital visits. The Texans have just learned that the Brenham brand was
aware of Listeria contamination in their products since 2013.

According to Blue Bell's update on May 8, 2015: "So far we have collected approximately 8 million gallons
of ice cream, and this phase of the product recall is now complete.

"Unfortunately, our training and repair efforts will take longer than we initially anticipated. We don't have a
firm timeline for when we will be back, but it will be several months at a minimum."

The uncertainty behind Blue Bell's reinstatement has inspired some people to sell their previously
purchased ice cream. There have been several sightings of Blue Bell ice cream pints posted on Craigslist
and other forums for as much as $10,000 a pint (that is $625 an ounce) to capitalize on people desperate
to get a taste of Blue Bell's famous Krazy Kookie Dough ice cream.

Another ad on Craigslist (for $500 a pint) read: "I have half a tub of Blue bell Homemade Vanilla flavor ice
cream left. No listeria (I ate the first half and I'm still here). I am willing to sample the Blue Bell in front of
legitimate buyers."

In League City, Texas, an ad of "pre-recall" Blue Bell ice cream (a gallon of Cookies 'n Cream and a few
small cups of Homemade Vanilla) was put on eBay for $50, plus shipping. The advertiser added
"Unopened and bought long before the recall. Will ship with dry ice." Since word got out about the frozen
black market, eBay put a stop to it and has since removed any Blue Bell ice cream listings on its site as
eBay has a company policy against selling recalled items.

However, under the frequently asked questions section of the Blue Bell website is this item: "Q. Should
people eat old Blue Bell products? A: Please don't consume Blue Bell products. Instead, please return the
product to the store where you purchased it for a refund."

3.5 Jeni's Splendid Ice Creams to restart production post Listeria

scare
Jeni's Splendid Ice Creams plans to restart production after neutralizing the Listeria scare that led to
product recall, halt in plant operations and closure of 21 shops.

Listeria was found in a pint of ice cream in Nebraska last month.

The announcement regarding resuming operations came from owner Jeni Britton-Bauer's post on the
company's Facebook page at the beginning of this week. The production of the Columbus-based ice
cream has been shut for nearly three weeks. The company recalled 265 tons of its products (worth
$2.5m) and pledged not to reopen until it was 100% sure its facility was free from Listeria and new
processes were in place.

Last week the company pinpointed the source of the bacteria to a spout on a pint-filling machine and
began instituting a series of changes both inside its Michigan Avenue production kitchen and to its
operations there.

Jeni's CEO John Lowe said the company has redesigned the kitchen to minimize any potential problems
and is working to establish color-coded hygienic zones. All fresh fruits and vegetables are being
processed at a separate location. Employees are receiving training on sanitation and improving
operations. The kitchen improvements are estimated at $200,000.

The full Facebook post read: "It's been a flurry of activity this past week in our production kitchen. We
removed walls, set up foot foaming stations; we now have a conveyor belt! We examined and reworked
every single process.

"Thanks to the team from around the country who made it work alongside the tireless army that is
#teamjenis. We plan to fire this baby up by the end of the week. Mr. Sulu, stand by to take us to
maximum warp."

However there was no mention about when the company's 21 scoop shops would reopen.
