MEALS

LETS EAT!
WELCOME TO MY COOKBOOK

My name is Nicole and I grew


up on Long Beach Island, NJ. I
grew up in an Italian kitchen
where my mother inspired me
to cook. Here are some of my
favorite weeknight meals
"AIR FRIED" SALMON BOWL

Salmon
Rice of choice
1 sliced cucumber
1/2 sliced avocado
Pickled Ginger
Sesame Seeds
Honey
Soy Sauce
Rice Vinegar

First, preheat your air fryer to 375. While the air


fryer is heating up, place the salmon in a bowl
with soy sauce, rice vinegar, siracha and
honey.Let the salmon marinade while the air
fryer is heating up, if you can do this step a few
hours before thats even better. Next, add the
salmon to the air fryer for 8 minutes and flip
over halfway between cooking. Next assemble
the bowl , add the rice, cucumbers, avocado,
pickled ginger. Finally add the salmon and enjoy!
If you do not have an air fryer, you can bake it at
375 for 10 mins
BLACK BEAN &

SWEET POTATO

TACOS
1 Can of Black Beans
I -2 sweet potatoes
Cheese of choice
( optional)
Salsa
Sour Cream or Plain
Greek Yogurt
Tortillas

First, preheat the oven to 375. In the meantime


take a baking dish and add on the tortillas. Next,
drain the black beans and cut up the sweet
potatoes in cubes. Then in a pan, sautee the
sweet potatoes, black beans onion, and
seasonings in a pan until softened. Finally, add
the sweet potato, and black bean mixture to one
side of the tortilla. Top the tortilla with cheese
and fold over the naked side. Put in the oven for
10 minutes. Serve with salsa, sour cream and
whichever toppings you'd like !
LEMON BROCCOLI

PASTA

Pasta of choice
1 head of broccoli
1 Lemon
Ricotta cheese
Red pepper flakes

First, preheat the oven to 375. In the meantime


take a baking dish and add on the tortillas. Next,
drain the black beans and cut up the sweet
potatoes in cubes. Then in a pan, sautee the
sweet potatoes, black beans onion, and
seasonings in a pan until softened. Finally, add
the sweet potato, and black bean mixture to one
side of the tortilla. Top the tortilla with cheese
and fold over the naked side. Put in the oven for
10 minutes. Serve with salsa, sour cream and
whichever toppings you'd like !
CHICKEN

BURITTO BOWL

2 Chicken Breasts
2 Bell Peppers Sliced
Rice of Choice
Paprika
Cuman
Salt & Pepper
Olive Oil

First, preheat the oven to 400. In the meantime


take a baking dish and add the chicken and
sliced bell peppers. Next season the chicken and
sliced bell peppers with chili powder, black
pepper, salt, cumin, paprika and olive oil. Bake
chicken and peppers for 30-40 minutes (
depending on the size of your cutlets). Cook the
rice according to instructions and place in a
bowl. Shred the chicken or cut into pieces. Place
on the rice. Add on the peppers, black beans,
corn, and avocado.
TACO STUFFED

SWEET POTATO
1- 2 Sweet Potatoes
Ground meat of choice
Guacamole
Sour Cream
Black Beans
Corn
Avocado
Salsa
Paprika
Cumin
Salt & Pepper

First, preheat the oven to 400. In the meantime


chop the lettuce, avocado, and get your toppings
ready. Next, in a basking dish add the sweet
potatoes and poke holes in them. Cut the dweet
potatoes in half for a shorter cook time. Season
sweet potatoes with cumin, salt, pepper, paprika,
and oil. Bake for 30-40 minutes. Cook the ground
meat until brown and add in the same seasonings.
Add ground meat on top of sweet potato. Finally
add the toppings.
GARLIC SHRIMP

OVER RICE
1 pound of shrimp
White Rice
Garlic
Spinach
Olive Oil
Dry White Wine
Salt & Pepper
Red pepper Flakes
Lemon Juice

First get a pan. In the meantime chop the spinach


and garlic. Next, add olive oil to the pan and cook
the garlic until fragrent. Add in the spinach and
cook until tender. Set the spiach aside and add
more oil. Cook the shrimp 2-3 minutes on each
side. Remove the shrimp. Deglaze the pan with
the heat off with white wine. Turn the heat back
on after a minute and add the lemon juice, red
pepper flakes and shrimp. Add in the spinach and
garlic mixture and simmer for 5 minutes. Add
onto rice and enjoy!
BLACKENED

SHRIMP TACOS
Ingredients:
1 pound of shrimp
Paprika
Cumin
Tumeric
Garlic powder
For the Guacamole: Chili powder
1 Jalapeno Salt & Pepper
Totrillas Olive oil
4 Avocado

Cilantro
Tomatoes
Onion
2 Limes

First get a pan. In the meantime marinate the


shrimp in olive oil, paprika, garlic powder, cumin,
tumeric powder, chili powder, salt and pepper. Let
it marinade for 15 minutes. While the shrimp are
marinating make the guacamole. Chop up 4
avocados and add to a bowl. Mash the avocado
with a fork and add in a half of a chopped onion,
one jalapeno, and the juice form one lime. Add a
half of a chopped tomato on top and top it off with
cilantro. Cook the shrimp on a pan 2 minutes on
each side, Once cooked add shrimp and guacamole
to tortilla, serve and enjoy!
