ABSTRACT

This paper aims to explain about Mycotoxins where there was attention in 1960 when
there was an outbreak of aflatoxicosis (present in grains peanuts, nuts, corn and
cereals in general) in Europe. Its toxic metabolites are secondary recorded by
filamentous fungi. Where fungi at temperatures grow well, grains have the main
mycotoxins found in Brazil, such as: aflatoxins, fumonisins, zearalenone,
trichothecenes and ochratoxin A.

Key words: Toxin, grains, fungi, temperature, environment.
