PARTE 1: INTRODUCCION

The causa limeña is one of the emblematic dishes of Peruvian gastronomy,


its most characteristic ingredient is the yellow potato. In fact, outside the
borders of this country, it is known as Peruvian causa. Typical of summer
food, it consists of a kind of mashed potato pie filled with chicken or tuna
salad with mayonnaise, in addition to other vegetables. Generally, the
dressing consists of black olives and boiled eggs.

Parte 3: Procedimiento
1 First, we will start making the potato dough. To make
it, remove the shell and bring them to a boil with a little
salt until they soften.
2 Meanwhile, prepare the sauce. Just chop the peppers,
remove the seeds and veins, and cut into quarters. Boil
them until tender.
3 When they are soft, remove the skin and blend the
meat.
4You will obtain a sauce with a slightly thick consistency
and a nice yellow color. Set aside.
5 5 Now is the time to prepare the chicken. Cook it in
water together with one of the onions, the green pepper,
and the chilies. Don't forget to add salt to taste

6 In the same water as the chicken you can boil the beans and
carrots. When they are done, remove them from the water and
shred the chicken completely.
7 When the potatoes are ready, take advantage of the fact that
they are hot to make the dough. Just mash them and make sure
they are as fine as possible.
8 Now add all the other ingredients to the puree: the yellow sauce,
the oil, the juice of the lemons, salt and pepper. Mix very well by
kneading with your hands.
9 Combine the shredded chicken with the other finely chopped
onion, mayonnaise and a little salt and pepper.
10 Now it's time to assemble the causa limeña. First, take a portion
of the dough and cover the bottom of a mold. Then, place the
avocado slices on top of the puree.
11 Cover the avocado with the chicken mixture.
12 Take another small portion of dough and cover all the chicken.
On top, place the layer of carrots and green beans.
13 With the remaining dough, cover the causa limeña well. For the
garnish, cut the eggs lengthwise and place them on top of the
causa along with the olives. Let it rest for a while in the
refrigerator. This is a dish to be served cold.
