Mashed Potato
Ingredients

2 1/2 kilos of yellow potatoes, peeled
and cut into pieces
Salt
6 tablespoons unsalted butter, at
room temperature
2 garlic cloves, peeled and minced
1 1/2 cups of whole milk
1/2 cups chives, chopped
black pepper.
Preparation
Put the potatoes in a large pot and add water to cover the potatoes.
Add salt to the water and bring to a boil over medium heat. Once it
boils, reduce the heat and cover. Let cook for about 30 minutes until
the potatoes are soft.
Strain the potatoes and leave them only with a little water.
While the potatoes finish cooking, melt 2 tablespoons of the butter
and add the garlic. Sauté until opaque, 1-2 minutes. (Don't let it
brown)
Put the milk in a small pot and over medium-low heat, wait for it to
boil.
Return the potatoes to the pot and bring to a simmer. Mash with a
potato masher and add 3/4 cup of the hot milk, 4 tablespoons of the
butter, the cooked garlic, and the minced chives. remove.
Add the rest of the milk and a little of the liquid that you reserved
from the water in which the potatoes were cooked. Stir until they
have the desired consistency.
If necessary, add more liquid and season with salt and pepper.
