1st dish : Quesadilla Chicken Fajita Style

Sauce - sour cream / pico de Gallo


Ingredients for making quesadilla:

- 1 cups all purpose flour
- 3 tbsp of lard, shortening or butter 40g
- 1 tsp baking powder
- 1 tsp salt
- 3/4 cups hot water(as hot as your hands can hadle)
Steps
1) Mix flour and baking powder and salt
2) Add butter and crumble it tgt - like sand shortening
3) Add hot water
4) knead dough 5 mins
5) Rest 20mins

- 1 chicken breast
- Some cumin and chilli powder (may change)
- Salt and pepper
- 1 Red and green peppers
- Onion red
- Garlic
- Melted Butter (a little to fry tortilla)
- Cheese
Steps:
1) Chop chicken into small pieces and add cumin and chilli powder salt and
pepper then fry
2) Then next add bell peppers and onion and fry and add garlic
3) Then put in the chicken bowl and add lime juice
4) Then take the tortilla and add cheese then everything else
5) Then fold in half and fry both sides

- 2 tomato
- ⅓ big onion (1 small onion)
- 1 jalapeño (half)
- ⅓ cup of cilantro
- Half a lime
- Some salt
Steps:
1) First, chop tomatoes best to take out the seed
2) Then chop onions (small)
3) Then chop half a jalapeno and remove the seeds
4) Cut a bit of cilantro
5) Then squeeze lime juice and salt and then stir
Second dish : Empanadas
Sauce - guacamole / sour cream

- Half a small white onion or ⅓
- 1 or 2 cloves of garlic small
- Half a lime
- A bit of cilantro
- 2 avocados depending
- 1 tomato (half)
Steps
1) Chop onion and garlic
2) Chop jalapeno half
3) Chop cilantro
4) Squeeze half lime
5) Chop avocado 2
6) Chop tomato
7) Put everything in a bowl and squash with fork

Ingredients for empanadas:


- 2 cloves of garlic
- 1 small potato small chops
- 1 small carrot small chops
- Half a medium onion
- 1 ground beef
- 1 tablespoon of tomato paste
- 1 tablespoon chilli powder / cumin
- ½ teaspoon cinnamon
- Some cheese
Steps:
1) Chop garlic
2) chop potato and carrot into small cubs
3) Chop onions
4) Put the meat in a frying pan with potato and carrot and onion
5) Put a tablespoon of tomato paste and garlic
6) Power chili and cumin with a bit of sugar and pepper

Steps:
1) put flour into a bowl
2) Then add butter shortening cold
3) Then add water and mix
4) Roll the dough with some flour
In a small bowl, beat 1 egg. Brush empanadas with the egg wash.
Bake for 30 to 35 minutes or until golden brown. Let cool for a few minutes before
serving.
Preheat the oven to 163°. Line a large baking sheet with parchment paper.

- ¾ cup granulated sugar 150g (75g)
- ¼ cup water 60ml (40ml)
- 8 oz cream cheese 1 package, room temperature (half a package) 113
- 3 large eggs
- 12 oz evaporated milk 1 can (half) 177 \ 177/2=90 \
- 14 oz sweetened condensed milk 1 can (half) 207 \ 207/2 = 104
- 1 tbsp vanilla extract 10mL (half)
Steps:
1) Put 80g of sugar, and water. Do not stir, swish it around
2) Get a pastry brush and water to brush down the sides
3) When starts to get golden, brush the pan down and swirl
4) Then pour into cake tin directly
5) Let it cool down
6) Add cream cheese to a new bowl with electric mixer
7) Add one egg at a time and mix
8) Then add evap milk, condense and some vanilla extract
9) Mix it to nice and smooth with no lumps
10)Strane and sieve it to the tray
11) Then take a container to put hot water in it
12)Fill it halfway and put it in oven for 35-40 mins 163 degrees

First 20min - flan must be in oven


20 min - Next make empanadas filling - chop /fry
15 min - make quesadilla and empanadas dough (quesadilla resting 20 min)
20 min cut empanadas dough/fill and fold then put egg wash and put in oven also take out flan and
chill in fridge
25 min chop and fry ingredients for quesadilla
20 min Make gucamole and pico de gallo
15 min total washing dishes
