PREPARATION

Cut the beef tenderloin into thin


strips.
Season the beef with salt, pepper,
and cumin.
Heat oil in a large skillet or wok
over high heat.
Add the beef to the hot oil and stir-
fry until browned. Remove from the
skillet and set aside.
In the same skillet, add sliced
onions and cook until they are
translucent.
Add minced garlic and sliced
tomatoes to the skillet and cook for
a few more minutes.
Return the cooked beef to the
skillet and stir everything together.
Season with soy sauce and vinegar,
and toss well to combine.
Add French fries to the skillet and
cook for a few more minutes until
they are heated through.
Garnish with fresh cilantro and
serve hot with steamed rice.
