Thai Iced Tea

Ingredients: Qty. Units

Water 6 l
Black tea 24 bags
Honey 250 g
Anise stars 12 pcs
Cardamon Pod(smashed) 6 pcs
Cloves 12 pcs
Cream 500 ml
Milk 500 ml
Ice
MEP & Method:

MEP:
• Bring 6 lt of water to a boil, add the tea bags, honey, star anise,
cardamon pod and cloves. Stir until all the sugar dissolves. Boil tea for
about 3 minutes. Remove from heat.
• Allow tea to steep for at least 1,5h and let it cool.
• Strain the tea and keep it in the fridge.

Method:
• Mix milk and cream together.
• Pour the tea in a drink dispenser, add the dairy mixture and ice.
Ginger Lemongrass Limeade

Ingredients: Qty. Units

Syrup:
Water 1,5 l
Honey 500 g
Lemongrass(chopped) 12 pcs
Ginger(sliced) 90 g
Limeade:
Water 6 lt
Lime(juiced and zested) 12 pcs
Syrup
Ice
Garnish:
Lime (wedges) 4 pcs
Fresh mint leaves 200 g
Lemongrass 2 pcs
MEP & Method:

MEP:
• Bring lemongrass, honey, water and ginger to simmer.
• Remove from heat, cover and allow to cool completely, about 1-2 h.
• Strain, secure with lid and store in the fridge.

Method:
• Pour 6lt of water in drink dispenser. Stir in lemongrass syrup, lime
juice and ice.
• Garnish with lime wedges, mint and sliced lemongrass
