Using every day dark chocolate is the way I usually make my chocolate truffles because it’s not expensive and it
gets the job done. However, if you are really a chocolate fan and you love yourself some fancy rich flavored
chocolate then get it for these truffles because this will make your chocolate truffles taste absolutely amazing!

The ganache needs to be firm enough for you to roll into some balls. We want a firm yet smooth chocolate
ganache so that we do not lose the consistency, and you can scoop it properly into a ball shape.
Normal eating chocolate is not really the right ingredient and does not have the right consistency. So be sure to
use some good quality cooking chocolate because it is meant to be melted and used into desserts. And leave
the ganache to set overnight for it to be a smooth and soft texture!
Playing with chocolate can get messy and you might feel scared about ruining it, but don’t worry! The
chocolate is supposed to be creamy, soft and smooth textured. However, your chocolate can get extra smooth
in room temperature, which is why it starts softening even more quickly in your hands when you try rolling it.
My Christmas chocolate truffles recipe makes the ganache according to a 2:1 ratio of chocolate to cream and I
would specifically recommend weighing your ingredients and measuring properly for the perfect outcomes. All
my recipes taste better when they are made the right way with the proper ingredients and measurements.
Unlike me, you can try looking for the best chocolate you can find in the market. I would recommend a
chocolate in a 60%-70% range which is the smoothest. Avoid buying any chocolate chips or bars that have
hardening agents in them.
The cooking chocolate that I use for my Christmas chocolate truffles is usually not that expensive and not that
cheap, it’s mediocre quality and it still gets the job done. So don’t worry if you don’t want to spend too much.
Whipping cream and heavy cream are almost the same and both of them can be used in my Christmas
chocolate truffles recipe. Do not use normal cream that is for basic desserts, you can find heavy cream and
whipping cream labeled cream packs at every grocery store. Again, be sure to get the right ingredients!
