Low Carb Chicken Fajita Bake


Mexican food is the one thing that is very well-loved and in my house, we all can
agree on it. Everyone loves creamy, cheesy dinners. They’re filling, indulgent,
and tasty. That’s why low carb bakes are an excellent family supper loved by all,
even those who aren’t observing a low carb or keto diet.
All fajita bakes typically start with meat, ordinarily chicken or steak. The meat is
then sautéed with peppers and onions, and spiced with fajita seasoning. You can
also add cheese, sour cream, jalapenos, and any other toppings that you like or
love. Thankfully, chicken fajitas are a keto-friendly meal as long as you don’t
use tortillas.
This recipe is made using all of the customary fajita ingredients minus the
tortillas. With protein-packed chicken and dairy, healthy veggies, and the melty
indulgence of melted Monterey Jack and cream cheese even the kids will be
begging for more of this deliciousness.
Follow the simple steps listed below to make this easy low carb chicken fajita

Ingredients You Need For Fajita Bake (screenshot this for grocery

 2 lbs. Chicken Breasts, cooked and shredded (about 3.5 - 4 cups)
 1 (8 ounces) Package Cream Cheese, softened (Cream cheese)
 1 Tablespoon Fajita Seasoning or Taco Seasoning (Taco Seasoning),
(Fajita Seasoning)
 2 Cups Shredded Monterey Jack Cheese (Monterey Jack Cheese)
 1 Tablespoon Oil (Coconut oil)
 2 Bell peppers, seeded and sliced
 1 Large or 2 Small Onion, sliced
 1/4 cup Canned Diced Tomatoes and Green Chilies
 1/4 cup Heavy Cream (optional)

How Do You Make Chicken Fajita Bake


Preheat oven to 350 degrees, take caution and keep children out of the kitchen!
Prepare a 9x13 casserole dish (or any dish you can even use a cast-iron skillet, read
below to find out more) with coconut oil cooking spray.
In a large cast-iron skillet over medium-high heat, add coconut oil and swirl to
coat it completely (this acts as a non-stick and prevents wastage). Add chopped
onions, peppers and diced tomatoes to the skillet (chop them the best you and your
kid's love, we prefer julienne). Cook it over medium-high heat and stirring
occasionally until softened. Remove from heat and let it cool slightly.
To the skillet, add shredded chicken, season it with salt and pepper to taste (key to
this is having big shreds to not make a mess!!), cream cheese, heavy cream, fajita
seasoning, and 1 cup cheese. Stir to combine.

Transfer to a casserole dish (Tip: You can also use a cast-iron skillet to make
this low carb baked fajitas recipe or toss everything on the grill in an oven-safe
grilling pan, you can even use an open sheet pan for this yummy recipe. Grilled
chicken has a unique flavour that makes chicken fajitas extra tasty.). Top this with
the remaining cheese. Bake it for 25 to 30 minutes or until cheese is melted and
bubbling.

Add More Colors
If you want to jazz up your plate and make the kids love eating it. Here’s a pro-tip
make it more colourful, you can use a rainbow of bell peppers, instead of just
the traditionally used green. Bell peppers bring colour and a diversity of flavour
to your dish, as well as lots of Vitamin C and other essential nutrients.
Red, yellow, orange and even purple bell peppers will be easily available near
your farmers market.
You can also add some green chillies or jalapeños to turn up the heat or simply
if you love spicy food. Bake them with other veggies to make it even spicier or
sprinkle them on top at the end. Other fun add-ons to your fajita bake would be
black olives, diced avocado, or diced tomatoes.
All these ingredients are low carb and keto-friendly so no harm in adding these to
your dish!!
Shredded Chicken Expert-Tip
One of my time-saving kitchen tricks and tips is to make shredded chicken in
batches. This is the best way to save time especially if you’re on a keto diet and
need a lot of boiled chicken on hand for everyday use.
Keep it frozen and ready to pull out to use in our favourite healthy chicken recipes.
You can do so easily over the weekend and store in plastic containers in small
batches ready to defrost and use.
Can Taco Seasoning Be Used Instead of Fajita Seasoning?
Packaged taco seasoning and fajita seasoning typically contain flour and/or
cornstarch. You can use it in this recipe, as you’ll only need 1 tablespoon spread
across 12 servings of fajitas so it’s still very low on carbs. Our preferred
seasonings are (Taco Seasoning), (Fajita Seasoning).
To make a simple keto taco/fajita seasoning, simply combine the following: 1
tbsp cumin, 1 tsp garlic powder, 1 tbsp chilli powder, 1/4 tsp onion powder, and
1/4 tsp salt and stir together. There you have it very easy and very simple.
The best part, it gives the same flavours as any regular taco/fajita seasoning
would!!
