CHAPTER 1
INTRODUCTION
With that, Philippines is one of the top five exporters of bananas, with some
2.85 million metric tones exported in 2017. Banana became the all-time dessert and has
been served on restaurants. One of the famous banana dish is the bananacue- as the
best selling streetfood.
Turon with a twist is a product that offers something fresh and distinctive from
the mass-produced turon currently available on the market. It offers for sale spring roll-
wrapped bananas that have been fried until crispy. The product can be served with
flavor-infused syrups to appeal to customers, especially children. Turon, also known as
banana lumpia, is a common Filipino snack made of a banana wrapped in deep-fried
spring roll wrapper that is typically dusted with caramelized sugar. Slices of lecheflan
are frequently served alongside the banana as a complimentary filling. In the Phillipines,
it is one of the more popular street meals both urban and rural areas, sold by a large
number of street sellers.
But more often, Philippine cuisine also served another way of cooking banana
in a more attractive and easiest way which is the TURONES CON LECHE that has
been originated in the city of Tiaong, province of Quezon- rich in coconut plantations,
rice farm and forest attractions. Turones con leche is also known as lumpiang saging or
banana lumpia made of a thinly sliced of banana and a slice of jackfruit dipped in
coconut cream and condensed milk.
This study focuses to discuss a food delicacy that has been originated in Cabay,
municipality of Tiaong, Quezon. It states how the food was organized, prepared, cooked
and served in an attractive way. It represents a specialty food of Cabay, Tiaong,
Quezon- turones con leche. It promotes and serves the unique development of a food
delicacy by the resident of Cabay. With this study, it will contain reliable informations
about the place where the food originated and the person behind this great discovery.
The scope of this study focuses on observations of food origin, survey to the
developer and food efficiency. The limitation of this study will not cover other ideas that
are not related to the discovery/history of the food.
The findings of this research will contribute to promote our province with the
discovery of unique food delicacy.
Bananas are grown in 135 nations and territories in the tropics and subtropics.
Bananas are the second most produced fruit after citrus, with the majority of producers
being farmers who raise the crop for their own use or for local markets (Bergh, Picq &
Vezina, 2013). It contributes 16% of the total fruit produced worldwide. Additionally,
according to estimates of up to 27% of global production, India is the world’s largest or
most prolific grower of bananas. They claim that the banana can be used for a variety of
purposes, including food, feed, medicine, packaging, and numerous other industrial
uses (Debabandya Mohapatra,2010). Bananas (Musa Paradisiaca, family Musaceae) is
a central fruit crop of the tropical and subtropical regions of the world grown on about
8.8 million hectares (Mohapatra, Mishra & Sutar, 2010). It is possibly the world’s oldest
cultivated crop (Bhowmik, Duraveil, Kumar, & Umadevi, 2012). It is one of the tallest
herbaceous plants with a pseudostem. It’s tough treelike pliable stem is composed of
the sheathing twisting leaf bases, which contains fibers of bananas are grown, of which
a vast majority are grown in tropical Asia (Simmonds, 1962).
It was determined that a specific proportion of the cellulosic fiber Mesta found in
agricultural ropes may be replaced with banana fiber. The Mesta or related fibers that
were thus conserved could be used more profitably to package textiles and other
materials. Fiber yarn improves the colorfastness and dyeing capabilities of fabric and
can also be bleached. The farmer would benefit from this additional market for the
banana plantations products, but a reliable bulk supply of banana fiber will be necessary
for economic use, initially at a somewhat lower cost than that of the competing fibers.
The 1.5 to 2.7m long fibers have a tensile strength and are typically used to make ropes
(Karolia,2005).
METHODOLOGY
RESEARCH LOCALE
This study will be conducted in Barangay Cabay, Tiaong, Quezon which is the
researcher’s immediate environment. The researcher choose Barangay Cabay because
of abundant resources of banana that is needed to create turones con leche and to
explore the banana products. The research locale was selected as there is no research
yet that is conducted.
RESEARCH RESPONDENTS
The respondents of the study were 15 selected Senior High School students of
Cabay National High School for school year 2022-2023. Also the person behind this
famous delicacies were also one of the respondents. The respondents were chosen
through sample random sampling since the researcher wants to have an effective and
reliable research result. The researcher will use questionnaire method that has fast and
efficient gathering information from sizeable sample volumes. This questionnaire
method are particularly effective for measuring behavior, preferences, intentions,
attitudes, and opinions.
RESEARCH DESIGN
This chapter aims to presents the analysis of the gathered data which is further
interpreted to reveal the quality and creativity of ‘Turones Con Leche’ with a twist’.

R1- My product is the banana cake. (Ang aking produkto ay ang banana cake.)

version of turon. The Leche serves as the dip made with coconut milk and

ding pang meryenda. Ang pangunahing sangkap ng turones ay saging at langka na
ibinalot sa lumpia wrapper. Ito ay pinaliit lamang na bersyon ng turon. Ang Leche bilang
dip o sawsawan ng turones ay gawa sa gata ng niyog at condensed milk.)

malinamnam at inihahanda sa mga okasyon.)

as also a source of income. (Nang magkaroon ng pandemya, sinubukan kong itinda
ang turones con leche bilang karagdagan sa hanapbuhay.)

R11- The hurdles that I overcome in selling this products is the inflation of the
price of banana-it’s main ingredients especially if the typhoon affects it sources
so the supply gets smaller and the prices are becoming higher. (Ang naging
suliranin lamang sa pagtitinda ng produktong gawa sa saging ay ang pagtaas ng presyo
ng saging mismo, lalo na pag tinamaan ng bagyo ang mga lugar na pinanggagalingan
nito dahil sa lumiliit ang supply kung kaya’t tumataas ang presyo.)

R1- Try and try until you succeed. (Subukan mo nang subukan hanggang sa
magtagumpay ka.)
R2- Banana is one of the most used products by Filipinos that will surely made
their life stable and supports their cooking and business skills. So keep on going
because there are many people that becomes success with the help of banana.

magkaroon ng maayos na pamumuhay at sumusuporta sa kanilang talento sa pagluluto
at pagtitinda. Kaya naman, magpatuloy ka lang dahil maraming tao ang nagbago ang
buhay dahil sa tulong ng mga produkto ng saging.)

negative side. (Palagi kang magtiwala sa sarili mo, wag mong isipin ang ibang tao lalo
na yung puro negatibo ang maitutulong say.)

CHAPTER V
CONCLUSION
The following conclusions were drown based on the findings in the study.
1. Banana industry is a popular in the Phillipines cause there are many farmers
who are capable of producting it.
2. Turones con leche is a popular delicacies and dish serves in many
restaurants not only in the province of Quezon but also on NCR.
3. Many citizens enjoyed and loved to eat this dish since it has it’s natural
ingredients and no preservatives added.
4. Turones con leche typically served for merienda since it has the perfect blend
of flavor and texture.
5. It’s accessibility makes for an easy on-the-go snack.
6. The use of banana in dishes has it’s health benefits among people.
RECOMMENDATION
Using banana as a source of health benefits to meals to create a flavorful and good
texture in many dishes. Bananas are high in antioxidants and potassium which are good
for the skin-not to mention good for the health. This is a good reason as any to indulge
in this treasured sweet.
The inquiry of different cooking methods will serve as your guide to discover another
dish that is also made up of banana. If different cooking methods are done, it will result
to a more attractable and peculiar to another banana dishes.
3. Try to test another natural dip’s of your products that also comes from
available sources in your locality.
By creating much different combinations of dips can also advanced the taste and flavor
of your turones con leche. As an example is the combination of brown sugar, butter and
heavy cream. That’s it!
Make sure that you know the variety of the banana production you are going to use.
One of the characteristics that you should based is if it does not contain fertilizers and
all chemicals that other plantation uses. It is for the sake of the quality of your product
that you are going to cook.
