Help me perfect this simple, quick and practical recipe of mine: diced onions,eggplants, tomato and pepper in hot oil
for 5 min then add diced plantains or sweetpotato (sometimes both) then at the top crack open 4 eggs then cover the
pan for ~ 20-30 min in low heat, then I can simply uncover and serve. It fine and dandy but I feel it’s too basic I need
more flavors and cream factor.
