Acknowledgement
This energy audit is an opportunity for me to enhance the knowledge of energy audits in
theoretical & practical context. I got the chance to visit couple of branches in Domino’s Pizza
(Pvt) Limited for conduct this energy audit. In those visits, I have got experience about how
the operation process, about the several machineries, energy consumption patterns in that
kind of industries, energy wastages and conservation techniques in industries, etc.
Thus, I would like to covey my gratitude to lecturer in charge of Energy Auditing course
module Dr. Abdul Rahim Nihimya, Senior Lecturer of University of Sri Jayewardenepura for
offer me a greatest opportunity.
Without the help and consideration of the management of Dominos Pizza network, I could
not conduct this kind of energy audit. Therefore, I kindly expressed my gratitude to Mr.
Samantha De Silva the area manager, Mr. Roy Fernando branch manager of Dominos

1. Objectives

• Conduct the walk-through audit for identify the energy consumption and energy
wastages.
• Suggest energy-saving opportunities and energy conservation techniques.
• Understand energy usage and ways to use energy better.
• An energy audit can identify safety concerns with electrical systems, wiring, and
ventilation, thus making your home or business safer.

2. Introduction
Energy is one of an essential requirements in modern human civilization. But energy is
limited. It is responsibility to use energy in efficient ways. According to the sustainable goals
of United Nations Sustainable cities and communities, Responsible consumption and
Production are playing key roles.

Considering industries, significant cost is allocated for energy. Therefore, energy


conservation is playing a major role in almost every industry.
An energy audit is an inspection survey and an analysis of energy flows for energy
conservation in a building. It may include a process or system to reduce the amount of energy
input into the system without negatively affecting the output. In commercial and industrial
facility, an energy audit is the first step in identifying opportunities to reduce energy expense.
Using a proper implantation of energy audit recommendations will lead to reduce energy
cost. Moreover, it will help to identify leakages make a safe industrial environment as well.
3. Facility Overview
I have selected Jubilant FoodWorks Limited as my case study. Under Jubilant FoodWorks
Limited, Domino’s Pizza brand Gampaha branch outlet has been selected for conducting my
energy audit.
Jubilant FoodWorks Limited (JFL/Company) is part of the Jubilant Bhartia Group and is
India's largest food service Company. The Company holds the master franchise rights for
three international brands, Domino's Pizza, Dunkin' Donuts and Popeyes addressing three
different food market segments. The Company launched its first homegrown brand – Hong's
Kitchen in Chinese cuisine segment & has also begun offering brand-owned ready-to-cook
range of sauces, gravies and pastes, 'ChefBoss'. The Company also entered into the exciting
world of Biryanis with the launch of "Ekdum!". It offers the widest range of Biryanis curated
from various parts of India using authentic ingredients along with extensive range of Kebabs,
Curries, Breads, Desserts and Beverages.

The Company currently operates more than 1,701 outlets for Domino's Pizza, Dunkin' Donuts
and Hong's Kitchen and is a market leader in pizza segment. The Company has more than
30,000 brand ambassadors committed to deliver value to its customers.
Domino's Pizza, Inc trading as Domino's, is an American multinational pizza restaurant chain
founded in 1960. In Sri Lanka around more than 20 outlets are located all over the country.

3.1 Mission & Vision

3.1.1 Vision
To lead the internet of food in every neighbourhood.
3.1.2 Mission
To redefine convenience by creating inspired food, picked up in three minutes or safely
delivered in 10.
3.2 About the Gampaha Outlet
• The Gamapaha outlet is working Monday to Saturday from 11.00 am to 11.00 pm.
There are 10+ workers work here. Several electrical equipments and LPG gas oven
are used in this branch. Moreover, they use diesel generator as electrical energy
source at power cut at the main grid.

• According to the CEB tariff category, this outlet has belonged to ‘General Purpose/
Hotel (1-2). Because the facility has energy consumption over 180 kWh per month.
The following table shows the tariff. According to the tariff they have chosen, there is
no tariff calculation depend on the peak/off-peak times.

It is identified that there was no proper energy audit conducted in Gampaha outlet in last six
months. Moreover, several energy wastages have been identified.

• Moreover, 10 kW Diesel generator is used as a backup power source.


4. Electricity consumption

• Electricity bills generated by Ceylon Electricity Board were analyzed for 6


months in 2022. The following table shows the data.

In here above graph (Fig 4.) electricity consumption was analyzed from 24 December 2021 to
26 November in 2022. Considering the energy consumption of Domino’s Pizza outlet
Gampaha Branch, consumption has been dropped from 24 December 2021 to 24 January
2022 period. Because the production had been increased due to the Christmas season. But it
has been decreased after the Christmas. Then energy consumption has been raised in month
of April to May period. It is revealed that the production also increased during that period due
to the situation in the country. Number of people who visited to the restaurant is significantly
increased in that period. But there was a decrement can be identified from month of May to
June. The manager of the branch outlet mentioned that, during that period their two air
conditioners were broken and they had to use fans. Thus, HVAC load has dropped. Although
energy demand climbed after June because of the seasonal loads of HVAC systems.
Moreover, the company top management has been decided to expand their production rate
from month of August. As a result of that the energy consumption has remained at a higher
level than previous months unit November 2022. According the analyzed data, it is clear that
the energy consumption has increased gradually over month due to various technical,
operational and environmental reasons.

When analyzing the energy cost of this facility (Fig. 5), the highest energy cost is calculated
as electricity cost. Similar to the electrical energy consumption, electrical energy cost is
varied during the period of 24 December 2021 to 26 November 2022. Even though Ceylon
Electricity Board had increased the electricity priced from 10th August 2022, it was not
affected to this industry because this industry belongs to ‘Hotel (1-2)’ category which had not
any price increment by the tariff revision in August 2022. Although there is a tendency to
decrease the energy cost for CEB due to the scheduled power shredding.
After the scheduled power shredding by the CEB, the manager stated that the company has to
spent significant amount of diesel fuel cost for running the electric generator. But he failed to
provide data regarding the diesel fuel cost.

• Moreover, LPG gas powered ovens are used in this facility. But there is no proper
gas measuring device was attached to the system. Therefore, it was unable to
analyze the LPG gas consumption and its pattern in this audit. But it must be
analyzed in future energy audits.
5. Potential Energy Conservation Measures (ECM) in the
Facility

• There are several places have been identified where energy wastages are occurred.
Due to the lack of maintanance of the facility area and their equipments and
machineries, energy is wasted. Those things have been listed below.

5.1 Air Conditioners are not maintained properly.

• Both 2 celling cassette (Fig. 9) and 2 split type air conditioners (Fig. 8) are used in
this facility. Air flow louvers are blocked with dust in every air conditioner. Air
flow rate is also low significantly. Because air filters could be blocked with dust.
Air conditioning system have to take unnecessary time to reduce the indoor
temperature. Hence extra energy is wasted.
• Filters and louvers of every air conditioner must be cleaned regularly.

• Even though the air conditioner optimization devices are fixed to split type air
conditioners, those devices were not at operation state. Air conditioners are very
old which may cause reduction of energy efficiency.
• Air conditioners should be replaced or should be maintained.
5.2 Air Curtains are not maintained properly.

• There are 2 air curtains are used at front entrance and rear entrance. Air curtains
are blocked with dust (Fig. 11) making an unnecessary load for its motors.
• Air curtains should be cleaned.

• Both front and rear entrance doors are closed automatically. Therefore, no need to
use these air curtains when doors are closed. But air curtains work at all the
working time without checking weather the doors are opened or closed.
• The automated system should be implemented to the air curtained to turn off when
the doors are closed.
5.3 Door seals are broken

• Rubber air seals of both front and rear doors are broken. Significant conditioned
air is leaked through these gaps. Thus, it increased the cooling load of the facility.
• The door seal must be replaced.

5.4 Efficiency of LED light panels is low

• Efficiency of LED light panels (Fig.14) has been droped due to the dust layer. No
proper cleaning was done for LED light panels.
• The dust layer of the LED light panels should be wipe out regularly.
5.5 Energy wastages due to the cooker hood

• There is no separate make-up air system for cooker hood (Fig. 15). Thus, large
volume of conditioned air is removed by the exhaust system which can increase
the cooling load of air conditioners.
• As a solution, separate make-up air system should be installed (Fig. 17). The hood
make-up air system would consist of a fan drawing in outdoor air and passing
through a heating coil to temper air.

• Moreover, the deep fryer and the ovens are located next to the cooler room door
(Fig.15 ). Cooler room door is opened around 10 times per day. When the it
opens, heated air around the ovens and fryers can easily enter the cooler room.
Thus, it can rise the cooling load of the cooler room refrigeration system.
• Cooker exhaust system duct is also next to the cooler room (Fig. 18). It also emits
heat to the indoor environment.
• Deep fryer and ovens should be installed away from the cooler room.

5.6 Hot water system leakages


• Two separate hot water systems (Fig. 19, Fig. 20) are used for kitchen tap and
plate washing area. Among those systems, a hot water leakage was identified one
tap at the plate washing area which can lead to water wastage as well as increase
the water heating energy requirement.

• To stop the hot water leakage, sink tap should be replaced.

6. Potential of operation and maintenance (O & M) measures


in facility.

• Regular inspection and maintain the machineries.


• Operate equipment only when needed.
• Keep the premises clean.
• Conduct periodical energy audits to identify the energy wastages.
• Implement an energy management system (EMS) to the branch outlet.
• Implement and review schedules and control strategies to determine the facility
area is being operated optimally.

7. Recommendations
• Automated HVAC system should be installed with induced makeup air supply system
for the cooker hood.
• Exhaust duct of the cooker hood must be insulated.
• Air curtains should be automated with the state of the door.
• Door seals must be replaced.
• Fryer, ovens should be installed away from the cooler room entrance door.
• Cooler room door seal must be replaced.
• Plate washing section taps should be maintained or replaced to avoid leakages.

8. Conclusion
An energy audit is an important in industries to identify energy-saving opportunities. It will
help to understand the energy usage and ways to use energy better. In this report, a walk-
through energy audit is conducted at Domino’s Pizza Gampaha branch. Electricity and LP
gas are key energy sources used in the mentioned facility. Electricity consumption of past 6
months were analyzed to determine the electrical energy consumption pattern. In the walk-
through inspection, several energy wastages are identified and reported. Moreover, suitable
recommendations are provided for consume the energy in efficient manner.
