Introduction

A sweet potato cupcake is a delectable baked treat characterized by the

incorporation of mashed sweet potatoes into the batter. This addition imparts natural

sweetness, moisture, and a distinct earthy flavor to the cupcakes. Typically, the batter

includes a blend of flour, leavening agents, spices like cinnamon and nutmeg, as well as

standard cupcake ingredients like butter or oil, sugar, and eggs. The result is a moist

and flavorful cupcake with a slightly denser texture than traditional varieties.

Complemented by options such as cream cheese frosting or a cinnamon glaze, sweet

potato cupcakes offer a delightful and unique twist on the classic cupcake experience,

perfect for those seeking a comforting and warmly spiced treat.

Purpose of The Study

Sweet potato cupcakes emerge as a groundbreaking and distinctive creation in

Preliminary Literature Review

A sweet potato cake is a type of cake made using sweet potatoes as one of the

main ingredients. It can be prepared using various methods and ingredients. The cakes

can have unique tastes and flavors, and they may also have functional benefits.

According to Daguang (2018) some sweet potato cakes are made using sweet potato

whole powder, sweet potato starch, and egg white, which can help prevent

gastrointestinal discomfort and have effects on reducing lipid and expelling toxins.

While, Zhinian (2018) emphasizes that other sweet potato cakes may include additional

ingredients such as hawthorn, honey, wild jujube, flavor materials, sugar, apple cream,

and fruit syrups, which can enhance the taste and improve digestion. There are also

pan-fried sweet potato cakes made from sweet rice flour, sweet potatoes, egg yolks,

brown sugar, and peanut oil, which are known for their crisp and soft taste and are

beneficial for health (Jinhao, 2016). Additionally, there are sweet potato-based

functional cakes that are rich in sweet potato protein and dietary fiber, and they have

various health benefits such as preventing constipation and liver function damage

(Xiankui et al., 2015).


Objectives of the Study

The following objectives will help this research paper focus on achieving its main

goal of studying sweet potato cupcake methods:

achieving optimal results?

3. What are the predominant sensory attributes of sweet potato cupcakes,

different recipes and preparation methods?


Hypotheses

Ho: There is no significant difference in taste and texture among sweet potato

cupcakes prepared using various recipes and ingredients.

H1: There is a significant difference in taste and texture among sweet potato

cupcakes prepared using various recipes and ingredients.

Methodology

Ingredients:

-1 cup mashed sweet potatoes (cooked and peeled)

-1 1/2 cups all-purpose flour

-1 teaspoon baking powder

-1/2 teaspoon baking soda

-1/2 teaspoon salt

-1 teaspoon ground cinnamon

-1/2 teaspoon ground nutmeg

-1/4 teaspoon ground ginger

-1/2 cup unsalted butter, softened

-1 cup granulated sugar

-2 large eggs

-1 teaspoon vanilla extract

-1/2 cup buttermilk


Procedure:

1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt,

cinnamon, nutmeg, and ginger. Set aside.

3. In another bowl, cream together the softened butter and sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. Add the mashed sweet potatoes to the butter mixture and mix until well combined.

5. Gradually add the dry ingredients to the wet ingredients, alternating with the

buttermilk. Begin and end with the dry ingredients. Mix until just combined.

6. Spoon the batter into the cupcake liners, filling each about two-thirds full.

7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the

center comes out clean.

8. Allow the cupcakes to cool in the tin for a few minutes before transferring them to a

wire rack to cool completely.
