Introduction

Cauliflower potato chips represent a type of snack or side dish crafted from

cauliflower florets, which are seasoned, coated, and either baked or fried to achieve a

crispy and flavorful chip-like texture. According to Jianqin (2017), these chips can be

prepared through various methods and with different ingredients. For instance, one

approach involves employing mashed potatoes, glutinous millet flour, and mashed

cauliflower as the primary raw materials, while another method utilizes pumpkin starch

and mashed potatoes (Shixia & Yuexin, 2014). The invention of low or zero-fat potato

chips also encompasses a technique for cooking cauliflower potato chips without the

use of cooking oil or fat (Butt et al., 2013). In summary, cauliflower potato chips present

a healthier alternative to traditional potato chips and can be crafted using diverse

ingredients and cooking techniques.

According to a study in Dublin by Jaiswal (2020) he stated that cauliflower is a

good food for consumption due to its high nutritional value and the presence of various

antioxidant compounds and phytochemicals. These compounds are known to have

beneficial effects on health and may help slow down the development of chronic

diseases like cancer and coronary heart disease. He also highlights that the nutritional

composition of cauliflower, including its phytochemicals and antioxidant properties, is

discussed, which further underscores its potential as a healthy food choice. Additionally,

the mention of potential new uses for cauliflower by-products suggests that this
vegetable can provide high-added-value compounds, making it an even more attractive

option for consumption.
