Steamed salmon & veg rice bowl

Prep: 10 mins Easy Serves 4


Cook: 15 mins - 20 mins

Ingredients Method
Step 1 In a small bowl, mix
200g brown rice
together the dressing
100g green beans
ingredients, then set aside.
200g pak choi, chopped into chunky pieces Boil the rice in plenty of
water and drain when just
4 x 100g salmon fillets
cooked, about 15 mins.
For the dressing
Step 2 Meanwhile, put the
4 tbsp kecap manis (sweet soy sauce)
vegetables and fish in a
juice 3 limes large steamer in two
2 tbsp sambal oelek (chopped chilli in a jar) or layers. Steam the fish for
1 red chilli, deseeded and chopped 5-8 mins and the veg for 4-
5 mins until cooked
1 tbsp rice vinegar through. Spoon the rice
1 tbsp golden caster sugar into bowls and top with the
steamed fish and veg. Pour
To serve some dressing over and
top with the spring onions,
4 spring onions, finely chopped
mixed seeds and pickled
4 tbsp mixed seeds (I used pumpkin, sesame ginger, if you like.
and sunflower)

pickled ginger, chopped (optional)
